🍰 Classic braised cucumbers with creamy mashed potatoes and turkey meatballs

Ingredients
- 750 g Potatoes
- Salt
- 0.5 tsp Organic Lemon Zest
- 500 g Ground Turkey
- Pepper
- 1 Pinch Mild Curry Powder
- 2 tbsp Olive Oil
- 2 Cucumbers
- 2 tbsp Butter (30 g)
- 1 tsp Apple Cider Vinegar
- 125 ml Hot Milk (1.5% Fat)
- Nutmeg
Instructions
- 1. Peel the potatoes and wash them under running water.
- 2. Cut the potatoes in half lengthwise.
- 3. Fill a pot with water, add some salt, and bring it to a boil.
- 4. Add the potato halves to the boiling water.
- 5. Boil the potatoes for about 25 minutes until they are cooked through.
- 6. Place the turkey mince in a large bowl.
- 7. Add the lemon zest to the mince.
- 8. Season the mixture with salt, pepper, and curry powder.
- 9. Mix all ingredients thoroughly together.
- 10. Form about 20 to 24 small balls from the mixture.
- 11. Make sure the balls are each 2 to 3 centimeters in size.
- 12. Heat oil in a large pan.
- 13. Fry the meatballs in batches in the pan.
- 14. Fry them for 8 minutes over medium heat.
- 15. Turn the meatballs frequently while frying.
- 16. Fry them until they are cooked through inside.
- 17. Wash the cucumbers under running water.
- 18. Cut the cucumbers in half lengthwise.
- 19. Scoop out the seeds from the cucumber halves with a teaspoon.
- 20. Slice the deseeded cucumber halves crosswise.
- 21. Heat one tablespoon of butter in a separate pan.
- 22. Add the cucumber slices to the hot butter.
- 23. Sauté the cucumbers for 3 minutes over medium heat.
- 24. Season the cucumbers with salt and apple cider vinegar.
- 25. Place a lid on the pan.
- 26. Let the cucumbers braise covered for 2 to 3 minutes over low heat.
- 27. Drain the cooking water from the potatoes.
- 28. Let the potatoes drip dry well.
- 29. Press the potatoes through a potato masher directly into a pot.
- 30. Pour the milk over the potatoes.
- 31. Add the remaining butter.
- 32. Stir everything into a creamy mash.
- 33. Season the mashed potatoes with salt.
- 34. Add a pinch of freshly grated nutmeg.
- 35. Place the mashed potatoes on a plate.
- 36. Serve the mash together with the meatballs and the braised cucumbers.
