🍽️ Stuffed Braised Cucumber

Ingredients
- 1600 g Braising Cucumber (4 Braising Cucumbers)
- 1 Onion
- 2 tbsp Sunflower Oil
- 600 g Minced Meat
- 300 g Chunky Tomatoes (can)
- 2 tbsp Freshly Chopped Herbs (e.g. Basil and Oregano)
- Salt
- Pepper (from the mill)
- Oil (for the casserole)
- Cayenne Pepper
- 50 ml Whipping Cream
- Basil (for garnishing)
Instructions
- 1. Peel the cucumbers.
- 2. Cut them in half lengthwise.
- 3. Scoop out the seeds with a spoon.
- 4. Peel the onion.
- 5. Dice it finely.
- 6. Heat oil in a pan.
- 7. Sauté the onions until translucent.
- 8. Add the minced meat to the onions.
- 9. Fry the meat until crumbly.
- 10. Wash the tomatoes.
- 11. Quarter the tomatoes.
- 12. Puree them finely.
- 13. Take about 100 grams of the tomato puree.
- 14. Add the tomatoes and herbs to the minced meat.
- 15. Season the mixture with salt and pepper.
- 16. Fill the cucumber halves with the meat mixture.
- 17. Place the remaining tomatoes in an oiled casserole dish.
- 18. Season the tomatoes with salt and cayenne pepper.
- 19. Place the stuffed cucumber halves in the casserole dish.
- 20. Cover the casserole dish.
- 21. Braise the cucumbers over low heat.
- 22. Cook them for about 30 minutes.
- 23. Check if the cucumbers are soft.
- 24. Stir the cream into the sauce.
- 25. Plate the cucumbers.
- 26. Garnish them with basil.
- 27. Serve the dish.
