🍽️ Fluffy Sour Cream Waffles with Sweet and Sour Cherry Sauce

Ingredients
- 500 g fresh ripe cherries
- 200 ml currant juice
- 2 tbsp acacia honey
- 1 tsp freshly grated ginger
- 1 vanilla pod (seeds)
- 3 g carob bean flour
- 50 g dark chocolate (85% cocoa content)
- 4 eggs
- 1 pinch salt
- 250 g flour
- 0.5 tsp cinnamon
- 80 ml whipping cream
- 200 g sour cream
- 3 tbsp sugar
- 1 tsp baking powder
- ghee (for the waffle iron)
- powdered sugar (for dusting)
Instructions
- 1. Thoroughly rinse the cherries under running water.
- 2. Cut the cherries in half and carefully remove the pits.
- 3. Pour the cherry juice and an equal amount of water into a pot.
- 4. Heat the liquid in the pot.
- 5. Add the honey, ginger, vanilla pod, and vanilla seeds.
- 6. Stir in the carob bean flour (a natural thickener) well.
- 7. Bring the mixture to a boil.
- 8. Let the sauce simmer for 3 to 4 minutes.
- 9. Stir occasionally to prevent burning.
- 10. Remove the pot from the heat.
- 11. Add the chocolate to the hot sauce.
- 12. Let the chocolate melt while stirring.
- 13. Add the prepared cherries to the sauce.
- 14. Let the cherry sauce cool down completely.
- 15. Separate the eggs: Carefully separate the yolk from the white.
- 16. Whisk the egg white with a pinch of salt until stiff peaks form.
- 17. Mix the egg yolk with the flour, cinnamon, cream, sour cream, sugar, and baking powder.
- 18. Let the batter rest for 20 minutes.
- 19. Gently fold the egg white foam into the batter.
- 20. Preheat your waffle iron and grease it with butter.
- 21. Place 2 to 3 tablespoons of batter into the hot waffle iron.
- 22. Bake the waffles one by one until golden yellow.
- 23. Plate the finished waffles.
- 24. Serve with the cooled cherry sauce.
- 25. Dust the waffles with powdered sugar before serving.
