🍽️ Crispy Lard Rings

Ingredients
- 250 ml Milk
- 100 g Butter
- 2 tbsp Sugar
- 1 packet Vanilla Sugar
- 1 pinch Salt
- 150 g Flour
- 4 Eggs
- 750 g Clarified Butter (for frying)
- Icing Sugar (for dusting)
- 150 g Icing Sugar
- 2 tbsp Lemon Juice
Instructions
- 1. Put milk, butter, salt, and sugar into a pot.
- 2. Heat the mixture and bring it to a boil once.
- 3. Stir in the flour until it is fully incorporated.
- 4. Continue stirring the dough over low heat until a firm ball forms.
- 5. Transfer the dough mixture to a bowl.
- 6. Beat in the eggs one by one.
- 7. Stir until the dough is smooth and pliable.
- 8. Cut baking paper into squares with a side length of 20 cm.
- 9. Brush the paper pieces lightly with butter.
- 10. Fill the dough into a piping bag.
- 11. Fit a star nozzle into the piping bag.
- 12. Pipe the rings onto the prepared paper squares.
- 13. Heat lard in a tall pot.
- 14. Test the heat by holding a wooden stick into the fat.
- 15. The fat is ready when small bubbles form on the stick.
- 16. Hold a paper piece upside down over the hot fat.
- 17. Let the ring slide from the paper into the oil.
- 18. Fry the piped cakes in batches in the fat.
- 19. Fry them for about 4 minutes on both sides until golden yellow.
- 20. Remove the finished rings one by one with a slotted spoon.
- 21. Let the rings drain on kitchen paper.
- 22. Whisk powdered sugar and lemon juice.
- 23. Stir until a thick glaze forms.
- 24. Wait until the rings have cooled down.
- 25. Brush the rings evenly with the sugar glaze.
- 26. Use a pastry brush for this.
