🍽️ Crispy Lard Pastries

Ingredients
- 2 Eggs
- 60 g Coconut blossom sugar
- 1 Vanilla pod (vanilla seeds)
- 2 tsp grated lemon zest
- 50 g Butter
- 350 g Spelt flour (Type 1050)
- 1 pinch Salt
- 750 g Clarified butter (for frying)
- 2 tbsp Powdered sugar (from xylitol)
Instructions
- 1. Beat the eggs together with the coconut blossom sugar and vanilla paste in a bowl until the mixture is very airy and foamy.
- 2. Stir the lemon zest into the egg mixture.
- 3. Melt the butter in a pot and let it cool down slightly for a moment.
- 4. Mix the flour with the salt and pour the mixture onto your work surface.
- 5. Make a well in the center of the flour mixture.
- 6. Pour the slightly cooled melted butter and the foamy egg mixture into the well.
- 7. Knead everything together into a smooth dough.
- 8. Heat the beef tallow (lard) in a pot.
- 9. Test the heat by holding a wooden spoon handle in the fat: If bubbles rise, it is hot enough.
- 10. Dust your work surface or a baking board with a little flour.
- 11. Roll out the dough very thinly.
- 12. Cut the dough into uneven triangles, rectangles, or diamonds with a side length of about 4 to 5 centimeters using a pastry wheel.
- 13. Make a small slit in the center of each piece of dough.
- 14. Fry the dough pieces in the hot beef tallow until golden brown.
- 15. Let the finished pastries drain on kitchen paper.
- 16. Serve the lard pastries warm or cold.
