  1. 1. Beat the eggs together with the coconut blossom sugar and vanilla paste in a bowl until the mixture is very airy and foamy.
  2. 2. Stir the lemon zest into the egg mixture.
  3. 3. Melt the butter in a pot and let it cool down slightly for a moment.
  4. 4. Mix the flour with the salt and pour the mixture onto your work surface.
  5. 5. Make a well in the center of the flour mixture.
  6. 6. Pour the slightly cooled melted butter and the foamy egg mixture into the well.
  7. 7. Knead everything together into a smooth dough.
  8. 8. Heat the beef tallow (lard) in a pot.
  9. 9. Test the heat by holding a wooden spoon handle in the fat: If bubbles rise, it is hot enough.
  10. 10. Dust your work surface or a baking board with a little flour.
  11. 11. Roll out the dough very thinly.
  12. 12. Cut the dough into uneven triangles, rectangles, or diamonds with a side length of about 4 to 5 centimeters using a pastry wheel.
  13. 13. Make a small slit in the center of each piece of dough.
  14. 14. Fry the dough pieces in the hot beef tallow until golden brown.
  15. 15. Let the finished pastries drain on kitchen paper.
  16. 16. Serve the lard pastries warm or cold.
