🍽️ Crispy Lard Fritters

Ingredients
- 40 g raisins
- 40 ml grappa
- 50 g butter
- nutmeg
- salt
- 200 g flour
- 4 eggs
- 2 tsp lemon zest
- 1 tsp sugar
- 50 g ricotta
- oil
- powdered sugar (for dusting)
Instructions
- 1. Soak the raisins in grappa for about 1 hour. Cover the bowl while doing so.
- 2. Put 250 milliliters of water, the butter, nutmeg, and a pinch of salt into a pot.
- 3. Bring the mixture in the pot to a boil.
- 4. Pour all the flour at once into the boiling liquid.
- 5. Stir the mixture vigorously until a firm dough ball forms.
- 6. Let the dough dry in the pot over low to medium heat for about 1 minute.
- 7. Make sure a light coating forms on the bottom of the pot as you move the dough.
- 8. Remove the pot from the stove and transfer the dough into a separate bowl.
- 9. Let the dough cool down briefly until it is no longer boiling hot.
- 10. Stir the eggs into the dough one by one while using the dough hooks of your hand mixer.
- 11. Add the soaked raisins along with the grappa liquid to the dough.
- 12. Mix the sugar, ricotta, and lemon zest into the dough mixture.
- 13. Fill a pot with about 4 centimeters of oil and heat it up.
- 14. Have two wet teaspoons ready to portion the dough.
- 15. Scoop dough portions with the spoons and shape them into small lumps.
- 16. Fry the dough lumps in batches in the hot oil.
- 17. Cook them for a few minutes until they are golden brown and crispy.
- 18. Remove the finished fritters from the oil and let them drain on kitchen paper.
- 19. Finally, dust the warm fritters with powdered sugar.
