🍽️ Crispy Lard Pastry Rings

Ingredients
- 300 g Flour
- 1 pinch Salt
- 0.5 unpeeled Lemon (zest)
- 1 tsp Vanilla sugar
- 80 g Sugar
- 80 g Butter
- 2 Eggs
- 1 Egg yolk
- 20 ml Rum
- 2 tbsp Yogurt
- Vegetable oil (for frying)
- Powdered sugar (for dusting)
Instructions
- 1. Mix the flour with the salt, the lemon zest, the vanilla sugar, and the sugar in a bowl.
- 2. Cut the butter roughly into the flour mixture.
- 3. Whisk the eggs, the egg yolk, the rum, and the yogurt in a small cup.
- 4. Pour the egg mixture onto the dry ingredients and knead everything into a smooth dough.
- 5. Continue kneading the dough until it is elastic and no longer sticks to your fingers.
- 6. If the dough is too sticky, add a little more flour.
- 7. Cover the dough and place it in the refrigerator for 15 to 20 minutes.
- 8. Divide the dough into two or three equal parts.
- 9. Dust a work surface with flour and roll out one dough part to about 3 millimeters thick.
- 10. Cut the dough into strips about 1.5 centimeters wide and 25 centimeters long.
- 11. Loosely roll each strip into a spiral.
- 12. Place the spiral into a deep, round skimmer spoon.
- 13. Heat the fat in a pot to about 170 degrees Celsius.
- 14. Hold the spoon with the dough carefully into the hot fat.
- 15. Wait until the dough keeps its shape in the fat.
- 16. Fry the rings for 3 to 4 minutes until golden brown, turning them once or twice.
- 17. Remove the finished rings from the fat and place them on kitchen paper.
- 18. Let the rings drain on the kitchen paper and cool down completely.
- 19. Dust the cooled rings with powdered sugar before serving.
