🍽️ Crispy Lard Pastries

Ingredients
- 0.5 cube fresh yeast (21 g)
- 250 ml lukewarm milk
- 500 g flour
- 20 g sugar
- 2 eggs
- 1 pinch salt
- 75 g melted butter
- lard (for deep-frying)
- flour (for the work surface)
- sugar (for rolling)
Instructions
- 1. Crumble the yeast into the lukewarm milk and stir until dissolved.
- 2. Sift the flour into a large bowl and make a well in the center.
- 3. Pour the yeast milk into the well.
- 4. Add the sugar, eggs, salt, and about 50 grams of soft butter.
- 5. Knead everything into a soft and pliable yeast dough.
- 6. Divide the dough into 12 portions and shape them into small balls.
- 7. Brush the dough balls with melted butter.
- 8. Cover the balls and let them rise in a warm place for about 10 minutes.
- 9. Dip your fingers in butter to keep them pliable.
- 10. Gently stretch the dough balls into flat discs using your buttered fingers.
- 11. Let the dough edge slide through your hand so that a thin hole forms in the center.
- 12. Heat the lard in a pan to about 170 degrees Celsius.
- 13. Add the dough pieces to the hot fat in batches.
- 14. Pour hot fat over the center of the pastries once or twice while frying.
- 15. Fry the pastries for 1 to 2 minutes until golden brown, but keep the hole in the center light.
- 16. Turn the pastries carefully so that no fat runs into the center.
- 17. Fry the second side for another 1 to 2 minutes until golden brown.
- 18. Let the finished pastries drain well on a wire rack.
- 19. Toss the still hot pastries in sugar.
