  1. 1. Crumble the yeast into the lukewarm milk and stir until dissolved.
  2. 2. Sift the flour into a large bowl and make a well in the center.
  3. 3. Pour the yeast milk into the well.
  4. 4. Add the sugar, eggs, salt, and about 50 grams of soft butter.
  5. 5. Knead everything into a soft and pliable yeast dough.
  6. 6. Divide the dough into 12 portions and shape them into small balls.
  7. 7. Brush the dough balls with melted butter.
  8. 8. Cover the balls and let them rise in a warm place for about 10 minutes.
  9. 9. Dip your fingers in butter to keep them pliable.
  10. 10. Gently stretch the dough balls into flat discs using your buttered fingers.
  11. 11. Let the dough edge slide through your hand so that a thin hole forms in the center.
  12. 12. Heat the lard in a pan to about 170 degrees Celsius.
  13. 13. Add the dough pieces to the hot fat in batches.
  14. 14. Pour hot fat over the center of the pastries once or twice while frying.
  15. 15. Fry the pastries for 1 to 2 minutes until golden brown, but keep the hole in the center light.
  16. 16. Turn the pastries carefully so that no fat runs into the center.
  17. 17. Fry the second side for another 1 to 2 minutes until golden brown.
  18. 18. Let the finished pastries drain well on a wire rack.
  19. 19. Toss the still hot pastries in sugar.
