🍽️ Ham and Noodle Stir-fry with Chili

Ingredients
- 400 g Rigatoni
- 200 g cooked ham (in thin slices)
- 2 tbsp Butter
- Salt
- Pepper (freshly ground)
- 2 red chili peppers
- 1 tsp dried oregano
- Parmesan
Instructions
- 1. Remove the fat rind from the ham, if present.
- 2. Cut the ham in half lengthwise.
- 3. Cut the ham halves into strips about 1.5 cm thick.
- 4. Wash the chili peppers under running water.
- 5. Slice the chili peppers lengthwise.
- 6. Remove the seeds and the white inner membrane from the chili peppers.
- 7. Finely dice the deseeded chili peppers.
- 8. Cook the pasta in boiling salted water until al dente.
- 9. Drain the pasta.
- 10. Reserve a small amount of the pasta cooking water.
- 11. Melt the butter in a small pan over medium heat.
- 12. Add the chili dice and oregano to the melting butter.
- 13. Sauté the chili and oregano briefly in the butter.
- 14. Add the cooked pasta immediately to the pan.
- 15. Mix the pasta with the chili butter mixture.
- 16. Add the ham strips to the pasta.
- 17. Season the dish with coarsely ground pepper.
- 18. Stir in 2-3 tablespoons of the reserved pasta cooking water.
- 19. Divide the pasta among four plates.
- 20. Generously sprinkle the pasta with Parmesan shavings.
- 21. Serve the dish immediately.
