  1. 1. Remove the fat rind from the ham, if present.
  2. 2. Cut the ham in half lengthwise.
  3. 3. Cut the ham halves into strips about 1.5 cm thick.
  4. 4. Wash the chili peppers under running water.
  5. 5. Slice the chili peppers lengthwise.
  6. 6. Remove the seeds and the white inner membrane from the chili peppers.
  7. 7. Finely dice the deseeded chili peppers.
  8. 8. Cook the pasta in boiling salted water until al dente.
  9. 9. Drain the pasta.
  10. 10. Reserve a small amount of the pasta cooking water.
  11. 11. Melt the butter in a small pan over medium heat.
  12. 12. Add the chili dice and oregano to the melting butter.
  13. 13. Sauté the chili and oregano briefly in the butter.
  14. 14. Add the cooked pasta immediately to the pan.
  15. 15. Mix the pasta with the chili butter mixture.
  16. 16. Add the ham strips to the pasta.
  17. 17. Season the dish with coarsely ground pepper.
  18. 18. Stir in 2-3 tablespoons of the reserved pasta cooking water.
  19. 19. Divide the pasta among four plates.
  20. 20. Generously sprinkle the pasta with Parmesan shavings.
  21. 21. Serve the dish immediately.
