🍽️ Honey-glazed Pork Roast

Ingredients
- 2.5 kg mild smoked nut ham with rind (not cooked; pre-order from the butcher)
- 3 garlic cloves
- salt
- pepper from the mill
- 1 tsp ground coriander
- 1 tsp dried thyme
- 2 tbsp oil
- 1 tsp grated orange peel
- 5 tbsp orange juice
- 4 tbsp liquid honey
- 1 tbsp mustard
- 2 tsp Tabasco
- whole cloves
Instructions
- 1. Rinse the piece of meat under running water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Peel the garlic cloves.
- 4. Mash the garlic cloves together with the salt until smooth.
- 5. Mix the garlic mash with pepper, ground coriander, fresh thyme leaves, and some oil to form a spicy paste.
- 6. Coat the meat all over with the paste.
- 7. Let the meat marinate in the refrigerator for three to four hours.
- 8. Place the meat skin-side up on a roasting rack.
- 9. Position the rack in the center of the oven, which has been preheated to 160 degrees Celsius.
- 10. Place a baking pan directly under the rack to catch dripping fat.
- 11. Pour half a liter of water into this pan.
- 12. Combine the orange juice, finely grated orange zest, and honey in a small saucepan.
- 13. Heat the mixture over low heat.
- 14. Stir continuously until a smooth, homogeneous sauce forms.
- 15. Fold in the mustard and a few drops of Tabasco sauce.
- 16. Remove the roast from the oven after one and a half hours.
- 17. Carefully try to separate the outer skin from the fat layer underneath without damaging the fat.
- 18. If the skin is still too hard to remove, let the meat cook a little longer.
- 19. Score the exposed fat layer in a pattern of large diamonds.
- 20. Brush the meat generously with the prepared honey sauce.
- 21. Insert whole cloves into the diamonds if desired.
- 22. Return the meat to the oven for another 45 minutes.
- 23. If the water in the pan below has evaporated, refill it with half a liter.
- 24. Brush the roast with the sauce again every 15 minutes during this baking time.
- 25. Serve the roast with a colorful vegetable salad with a herb dressing and crispy flatbread.
