  1. 1. Rinse the piece of meat under running water.
  2. 2. Pat the meat completely dry with a kitchen towel.
  3. 3. Peel the garlic cloves.
  4. 4. Mash the garlic cloves together with the salt until smooth.
  5. 5. Mix the garlic mash with pepper, ground coriander, fresh thyme leaves, and some oil to form a spicy paste.
  6. 6. Coat the meat all over with the paste.
  7. 7. Let the meat marinate in the refrigerator for three to four hours.
  8. 8. Place the meat skin-side up on a roasting rack.
  9. 9. Position the rack in the center of the oven, which has been preheated to 160 degrees Celsius.
  10. 10. Place a baking pan directly under the rack to catch dripping fat.
  11. 11. Pour half a liter of water into this pan.
  12. 12. Combine the orange juice, finely grated orange zest, and honey in a small saucepan.
  13. 13. Heat the mixture over low heat.
  14. 14. Stir continuously until a smooth, homogeneous sauce forms.
  15. 15. Fold in the mustard and a few drops of Tabasco sauce.
  16. 16. Remove the roast from the oven after one and a half hours.
  17. 17. Carefully try to separate the outer skin from the fat layer underneath without damaging the fat.
  18. 18. If the skin is still too hard to remove, let the meat cook a little longer.
  19. 19. Score the exposed fat layer in a pattern of large diamonds.
  20. 20. Brush the meat generously with the prepared honey sauce.
  21. 21. Insert whole cloves into the diamonds if desired.
  22. 22. Return the meat to the oven for another 45 minutes.
  23. 23. If the water in the pan below has evaporated, refill it with half a liter.
  24. 24. Brush the roast with the sauce again every 15 minutes during this baking time.
  25. 25. Serve the roast with a colorful vegetable salad with a herb dressing and crispy flatbread.
