🍽️ Crispy Ham Roast with Apple Jelly Glaze

Ingredients
- 4 tbsp Apple jelly
- 4 tbsp Lime or lemon juice
- 1 pinch Cayenne pepper
- 1.5 kg cured pork roast (with rind)
- 1 tbsp Ghee
- 1 kg small potatoes
- 1 Onion
- 4 tbsp Vinegar
- 6 tbsp Oil
- Salt
- Pepper (from the mill)
- 2 bunch Watercress
- 1 bunch Spring onions
Instructions
- 1. Preheat the oven to 175 degrees.
- 2. Warm up the apple jelly in a small pot.
- 3. Stir in the lime juice and cayenne pepper until the glaze is smooth.
- 4. Rinse the ham roast briefly with cold water.
- 5. Pat the meat completely dry with a kitchen towel.
- 6. Score the rind in a diamond pattern.
- 7. Heat ghee in a roasting pan.
- 8. Sear the ham on all sides.
- 9. Pour 200 milliliters of water into the roasting pan.
- 10. Brush the roast generously with the prepared glaze.
- 11. Place the roasting pan in the oven.
- 12. Roast the ham at 175 degrees for 90 minutes.
- 13. Brush the roast with the remaining glaze repeatedly during the cooking time.
- 14. Wash the potatoes thoroughly.
- 15. Boil the potatoes with skin in salted water for 20 to 25 minutes until tender.
- 16. Peel the cooked potatoes.
- 17. Let the potatoes cool down completely.
- 18. Slice the cooled potatoes into thick slices.
- 19. Peel the onion.
- 20. Slice or dice the onion.
- 21. Pluck the cress leaves from the stems.
- 22. Mix the potato slices, onions, and cress with the dressing.
- 23. Remove the root ends of the spring onions.
- 24. Wash the spring onions.
- 25. Halve the spring onions lengthwise.
- 26. Cut the spring onions into pieces about 5 centimeters long.
- 27. Remove the roast from the oven after 85 minutes of cooking time.
- 28. Add the spring onion pieces to the roast in the pan.
- 29. Let the roast cook with the onions for the remaining 5 minutes in the oven.
- 30. Slice the finished ham roast into thick slices.
- 31. Serve the roast with the potato salad and spring onions.
