  1. 1. Warm the apple jelly in a small pot or in the microwave.
  2. 2. Stir in the lemon juice and cayenne pepper until you have a smooth glaze.
  3. 3. Rinse the ham roast briefly under cold running water.
  4. 4. Pat the meat completely dry with a kitchen towel.
  5. 5. Score a diamond pattern into the rind of the ham.
  6. 6. Heat ghee in a roasting pan on the stovetop.
  7. 7. Sear the ham roast on all sides until browned.
  8. 8. Remove the roast from the pan and let it cool down briefly.
  9. 9. Insert a clove into each corner of the scored diamonds.
  10. 10. Place the roast back into the roasting pan.
  11. 11. Pour 200 milliliters of water into the roasting pan.
  12. 12. Brush the surface of the meat with some of the glaze.
  13. 13. Preheat the oven to 175 degrees Celsius.
  14. 14. Place the roasting pan into the preheated oven.
  15. 15. Roast the meat for 90 minutes.
  16. 16. Take the roasting pan out of the oven repeatedly during the cooking time.
  17. 17. Brush the meat with fresh glaze before putting it back in the oven.
