🍽️ Crispy Ham Roast with Apple Jelly Glaze

Ingredients
- 4 tbsp Apple jelly
- 4 tbsp Lemon juice
- 1 pinch Cayenne pepper
- 1.5 kg cured ham roast (with rind)
- 1 tbsp Ghee
- 5 g Clove (for darning)
Instructions
- 1. Warm the apple jelly in a small pot or in the microwave.
- 2. Stir in the lemon juice and cayenne pepper until you have a smooth glaze.
- 3. Rinse the ham roast briefly under cold running water.
- 4. Pat the meat completely dry with a kitchen towel.
- 5. Score a diamond pattern into the rind of the ham.
- 6. Heat ghee in a roasting pan on the stovetop.
- 7. Sear the ham roast on all sides until browned.
- 8. Remove the roast from the pan and let it cool down briefly.
- 9. Insert a clove into each corner of the scored diamonds.
- 10. Place the roast back into the roasting pan.
- 11. Pour 200 milliliters of water into the roasting pan.
- 12. Brush the surface of the meat with some of the glaze.
- 13. Preheat the oven to 175 degrees Celsius.
- 14. Place the roasting pan into the preheated oven.
- 15. Roast the meat for 90 minutes.
- 16. Take the roasting pan out of the oven repeatedly during the cooking time.
- 17. Brush the meat with fresh glaze before putting it back in the oven.
