  2. 2. Remove the toasted sesame seeds from the pan and place them on a plate.
  3. 3. Remove the tough stems from the fresh spinach.
  4. 4. Wash the spinach thoroughly.
  5. 5. Dry the spinach well, for example in a salad spinner.
  6. 6. Tear the dry spinach into coarse pieces.
  7. 7. Peel the onion.
  8. 8. Peel the garlic clove.
  9. 9. Peel the ginger piece.
  10. 10. Cut the onion into very small cubes.
  11. 11. Cut the garlic into very small cubes.
  12. 12. Cut the ginger into very small cubes.
  13. 13. Heat the oil in a large non-stick pan.
  14. 14. Add the diced onion, garlic, and ginger to the hot pan.
  15. 15. Sauté the vegetables for about two minutes over medium heat.
  16. 16. Add the prepared spinach to the pan.
  17. 17. Sauté the spinach briefly until it wilts and becomes soft.
  18. 18. Stir two tablespoons of teriyaki sauce into the spinach mixture.
  19. 19. Line a work surface with plastic wrap.
  20. 20. Place the ham slices side by side on the foil.
  21. 21. Place one tablespoon of the spinach mixture on the bottom half of each ham slice.
  22. 22. Roll up the ham slices tightly.
  23. 23. Cut the ham rolls diagonally in half.
  24. 24. Arrange the halved rolls on plates.
  25. 25. Squeeze the juice from the lemon half.
  26. 26. Wash the mint.
  27. 27. Shake the mint dry.
  28. 28. Pluck the mint leaves from the stems.
  29. 29. Finely chop the mint leaves.
  30. 30. Whisk the tahini paste with the remaining teriyaki sauce and vegetable broth.
  31. 31. Stir the chopped mint into the sauce.
  32. 32. Season the sauce with a little lemon juice.
  33. 33. Drizzle the ham and spinach rolls with the finished sauce.
  34. 34. Sprinkle the rolls with the toasted sesame seeds.
