  1. 1. Peel the white asparagus completely and cut off the woody ends. Peel the green asparagus only in the lower third and also cut off the ends.
  2. 2. Bring salted water to a boil and add the white asparagus for about 5 minutes.
  3. 3. Add the green asparagus to the white asparagus and cook everything for another 5 minutes.
  4. 4. Remove the asparagus from the water, shock it immediately with cold water, and let it drain very well.
  5. 5. Preheat the oven to 220 degrees Celsius with top and bottom heat.
  6. 6. Cut the ham into strips.
  7. 7. Grate the cheese finely.
  8. 8. Peel the onion and dice it finely.
  9. 9. Heat the butter in a pot and sweat the onions in it until translucent.
  10. 10. Deglaze the onions with white wine and let the liquid reduce briefly.
  11. 11. Add the vegetable broth and cream and cook the mixture over low heat for about 3 minutes.
  12. 12. Mix the cornstarch with one tablespoon of cold water until smooth.
  13. 13. Add the starch mixture to the sauce and cook everything for another 1 minute.
  14. 14. Season the sauce with salt, pepper, and nutmeg.
  15. 15. Place the asparagus in a baking dish.
  16. 16. Distribute the ham evenly over the asparagus.
  17. 17. Pour the sauce over the asparagus and the ham.
  18. 18. Sprinkle the grated cheese evenly over the top.
  19. 19. Place the baking dish in the preheated oven and bake the casserole for about 15 to 20 minutes until golden brown and bubbling.
