🍽️ Creamy Asparagus and Ham Casserole

Ingredients
- 500 g white asparagus
- 50 g green asparagus
- 150 g cooked ham
- 150 g Butter cheese (or mozzarella)
- 1 small onion
- 1 tbsp butter
- 100 ml white wine
- 100 ml vegetable broth
- 200 g whipping cream
- 1 tsp cornstarch
- salt
- pepper (from the mill)
- nutmeg
Instructions
- 1. Peel the white asparagus completely and cut off the woody ends. Peel the green asparagus only in the lower third and also cut off the ends.
- 2. Bring salted water to a boil and add the white asparagus for about 5 minutes.
- 3. Add the green asparagus to the white asparagus and cook everything for another 5 minutes.
- 4. Remove the asparagus from the water, shock it immediately with cold water, and let it drain very well.
- 5. Preheat the oven to 220 degrees Celsius with top and bottom heat.
- 6. Cut the ham into strips.
- 7. Grate the cheese finely.
- 8. Peel the onion and dice it finely.
- 9. Heat the butter in a pot and sweat the onions in it until translucent.
- 10. Deglaze the onions with white wine and let the liquid reduce briefly.
- 11. Add the vegetable broth and cream and cook the mixture over low heat for about 3 minutes.
- 12. Mix the cornstarch with one tablespoon of cold water until smooth.
- 13. Add the starch mixture to the sauce and cook everything for another 1 minute.
- 14. Season the sauce with salt, pepper, and nutmeg.
- 15. Place the asparagus in a baking dish.
- 16. Distribute the ham evenly over the asparagus.
- 17. Pour the sauce over the asparagus and the ham.
- 18. Sprinkle the grated cheese evenly over the top.
- 19. Place the baking dish in the preheated oven and bake the casserole for about 15 to 20 minutes until golden brown and bubbling.
