🍕 Crispy Ham Pizza with Fresh Sauce

Ingredients
- 500 g fine flour
- 2 tsp salt
- 1 cube fresh yeast (42 g)
- 1 tsp sugar
- 2 tbsp olive oil
- flour (for working)
- 60 ml olive oil
- 1 clove garlic
- 250 g strained tomatoes
- 1 tsp oregano
- salt
- pepper (from the mill)
- 1 pinch sugar
- 1 tbsp vinegar
- 250 g mushrooms
- 200 g grated hard cheese (e.g. Edamer)
- 200 g grated mozzarella
- 150 g Parma ham (in thin slices)
- 2 tbsp chopped parsley
Instructions
- 1. Mix the flour with the salt in a bowl.
- 2. Make a well in the center of the flour mixture.
- 3. Crumble the yeast into the well.
- 4. Sprinkle the sugar over the yeast.
- 5. Pour in about 80 milliliters of lukewarm water.
- 6. Let the mixture rest for 20 minutes.
- 7. Add the oil and about 100 milliliters of lukewarm water.
- 8. Knead everything into a smooth yeast dough.
- 9. If necessary, add a little more flour or water to reach the right consistency.
- 10. Let the dough rise covered in a warm place without drafts for about 1 hour.
- 11. Heat 1 tablespoon of oil in a pot.
- 12. Peel the garlic and press it into the hot oil.
- 13. Sauté the garlic until translucent.
- 14. Add the pureed tomatoes to the pot.
- 15. Season the sauce with oregano, salt, pepper, sugar, and vinegar.
- 16. Let the sauce simmer gently for about 10 minutes.
- 17. Taste the sauce one last time and adjust seasoning if needed.
- 18. Clean the mushrooms and slice them finely.
- 19. Mix the two types of cheese together.
- 20. Tear the ham into small pieces.
- 21. Preheat the oven to 250 degrees Celsius convection.
- 22. Slide two baking sheets into the oven to preheat them.
- 23. Divide the dough into four equal portions.
- 24. Knead each portion well on a floured surface to incorporate air.
- 25. Roll out the dough portions into round pizza bases.
- 26. Form a slightly thicker edge while doing so.
- 27. Place the pizza bases on baking paper sized to fit the baking sheets.
- 28. Spread about 4 tablespoons of the tomato sauce over the bases.
- 29. Leave a border of about 2 centimeters free.
- 30. Sprinkle the cheese and mushrooms on top.
- 31. Lightly salt and pepper the pizza.
- 32. Drizzle the pizza with a little oil.
- 33. Slide the baking sheets with the pizzas into the oven.
- 34. Bake the pizzas for about 10 minutes until the edge is crispy.
- 35. Remove the pizzas from the oven and let them cool for a moment.
- 36. Top the pizzas with the ham pieces.
- 37. Sprinkle the pizzas with parsley.
- 38. Serve the pizzas immediately.
