🥗 Crispy Ham and Cheese Salad with Quince Dressing

Ingredients
- 40 g green olives (pitted)
- 2 tbsp Sherry vinegar
- 1 tsp mustard
- 1 tbsp quince jelly
- salt
- pepper
- 4 tbsp olive oil
- 50 g Manchego
- 5 slices Serrano ham
- 1 head oak leaf lettuce
- 1 red chicory
Instructions
- 1. Take the olives out of the jar.
- 2. Chop the olives roughly with a knife.
- 3. Take a small bowl.
- 4. Add vinegar, mustard, quince jelly, salt, and pepper to the bowl.
- 5. Stir the ingredients well with a spoon.
- 6. Take a whisk.
- 7. Slowly add the oil to the bowl.
- 8. Whisk the oil in until the sauce is creamy.
- 9. Add the chopped olives to the sauce.
- 10. Mix the olives well with the sauce.
- 11. Take the Manchego cheese.
- 12. Slice the cheese into very thin slices.
- 13. Crumble the cheese slices roughly with your fingers.
- 14. Take the ham slices.
- 15. Cut each ham slice in half across the middle.
- 16. Fold the ham pieces into small flowers.
- 17. Get the oak leaf lettuce and the chicory.
- 18. Remove damaged or wilted leaves.
- 19. Wash the salads under running water.
- 20. Dry the salads in a salad spinner.
- 21. Cut the lettuce leaves into bite-sized pieces.
- 22. Alternatively, tear the chicory into small pieces.
- 23. Put the salad into a large bowl.
- 24. Pour the olive sauce over the salad.
- 25. Toss the salad gently until it is evenly coated.
- 26. Take two plates.
- 27. Portion the salad onto the plates.
- 28. Distribute the ham flowers on the salad.
- 29. Sprinkle the grated cheese pieces over it.
- 30. Serve the salad immediately.
