Ingredients
- 400 g dark wheat flour (Type 1050)
- flour (for the work surface)
- 0.5 packet dry yeast
- salt
- 0.5 tsp sugar
- pepper (from the mill)
- 30 g soft butter
- 60 g orange marmalade
- 2 tsp mustard powder
- 1.5 kg ham (boneless, order from the butcher)
- ghee (for frying)
- whipping cream
Instructions
- 1. Put flour, yeast, one teaspoon of salt, sugar, and pepper into a large bowl.
- 2. Pour in 270 milliliters of lukewarm water and the butter.
- 3. Knead everything with the dough hook until you have a soft dough.
- 4. Cover the bowl.
- 5. Let the dough rise in a warm place for about 30 minutes.
- 6. Put the orange marmalade and the mustard powder into a small bowl.
- 7. Stir the mixture until smooth.
- 8. Heat clarified butter in a large non-stick pan over medium heat.
- 9. Fry the meat for about 10 minutes, turning it regularly on all sides.
- 10. Use a sharp knife to score a millimeter-deep diamond pattern into the surface.
- 11. Remove the meat from the pan.
- 12. Spread the mustard marmalade evenly over the meat.
- 13. Set the pan aside.
- 14. Lightly dust a work surface with flour.
- 15. Roll out the dough to a size large enough to wrap the meat.
- 16. Place baking paper on a baking sheet.
- 17. Wrap the meat in the dough.
- 18. Place the package on the sheet with the seam side down.
- 19. Press the edges firmly together.
- 20. Let the dough rise for another 20 minutes.
- 21. Preheat the oven to 190 degrees.
- 22. Brush the dough with cream.
- 23. Cut a small hole in the center of the top.
- 24. Bake the roast in the oven for 30 minutes until golden brown.
- 25. Open the oven door slightly after baking.
- 26. Let the roast rest inside for 10 minutes.
