  3. 3. Knead everything with the dough hook until you have a soft dough.

  5. 5. Let the dough rise in a warm place for about 30 minutes.
  6. 6. Put the orange marmalade and the mustard powder into a small bowl.
  7. 7. Stir the mixture until smooth.
  8. 8. Heat clarified butter in a large non-stick pan over medium heat.
  9. 9. Fry the meat for about 10 minutes, turning it regularly on all sides.
  10. 10. Use a sharp knife to score a millimeter-deep diamond pattern into the surface.
  11. 11. Remove the meat from the pan.
  12. 12. Spread the mustard marmalade evenly over the meat.
  13. 13. Set the pan aside.
  14. 14. Lightly dust a work surface with flour.
  15. 15. Roll out the dough to a size large enough to wrap the meat.
