🍽️ Oven Ham Wrapped in Yeast Dough

Ingredients
- 1 cube fresh yeast (42 g)
- 400 g wheat flour
- 150 g whole wheat flour
- 1 tsp sugar
- 2 tsp salt
- 100 ml beer (room temperature)
- flour (for working)
- 2 kg pork ham (with fat edge, lightly cured, boneless)
- soft butter (for the baking sheet)
- 1 egg yolk
- 2 tbsp whipping cream
Instructions
- 1. Dissolve the yeast in 150 milliliters of lukewarm water.
- 2. Mix both types of flour with sugar and salt.
- 3. Knead the yeast water mixture, the room-temperature beer, and the flour mixture into a firm, smooth dough.
- 4. Cover the dough with a cloth.
- 5. Let the dough rise in a warm place for approx. 1 hour until the volume has doubled.
- 6. Knead the dough once more briefly.
- 7. Lightly dust a work surface with flour.
- 8. Roll out the dough with a rolling pin into a plate about 1 centimeter thick.
- 9. Preheat the oven to 160 degrees fan-forced.
- 10. Brush a baking tray with butter.
- 11. Place the ham in the center of the dough.
- 12. Wrap the dough over the ham.
- 13. Press the edges firmly so that the ham is completely enclosed by the dough all around.
- 14. Place the wrapped ham on the baking tray.
- 15. Make sure the dough seams are facing down.
- 16. Whisk the egg yolk with the cream.
- 17. Brush this mixture evenly over the dough.
- 18. Lightly score the surface in a diamond pattern.
- 19. Bake the ham in the oven for approx. 1 hour until golden brown.
- 20. Serve the ham warm or, after cooling down, sliced.
