🍕 Homemade Pizza with Ham, Artichokes, and Anchovies

Ingredients
- 20 g fresh yeast (0.5 cube)
- 1 pinch sugar
- 500 g flour
- 5 tbsp olive oil
- 1 tsp salt
- 800 g peeled tomatoes (1 large can)
- salt
- pepper
- 2 tsp oregano
- 4 anchovy fillets
- 100 g olives (black)
- 100 g Parma ham (in thin slices)
- 125 g mushrooms (small)
- 2 artichoke hearts (pickled)
- 8 chili peppers
- 250 g mozzarella
- 4 tbsp olive oil
- flour (for the work surface)
- olive oil (for the pans)
- semolina (for the pans)
Instructions
- 1. Dissolve the yeast and sugar in 200 milliliters of lukewarm water in a bowl.
- 2. Stir 2 tablespoons of flour into the yeast mixture.
- 3. Let this pre-dough rise for about 20 minutes in a warm place.
- 4. Put the remaining flour and the oil into a large mixing bowl.
- 5. Add the pre-dough to the bowl.
- 6. Knead everything into a smooth dough using the dough hooks of an electric hand mixer.
- 7. If the dough is too dry, add a little more flour.
- 8. If the dough is too wet, add a little more water.
- 9. Cover the bowl.
- 10. Let the dough rest in a warm place for another 20 minutes.
- 11. Sprinkle some flour on a work surface.
- 12. Knead the salt into the dough on the floured surface.
- 13. Let the dough rise again until its volume has doubled.
- 14. Grease the pizza pans with oil.
- 15. Dust the greased pizza pans with a little flour.
- 16. Drain the tomatoes well.
- 17. Mash the tomatoes with a fork.
- 18. Spread the tomato mixture evenly over the pizza bases.
- 19. Leave a 2-centimeter border around the edges.
- 20. Season the tomatoes with salt.
- 21. Season the tomatoes with pepper.
- 22. Season the tomatoes with oregano.
- 23. Rinse the anchovy fillets briefly under running water.
- 24. Pat the anchovies dry with a kitchen towel.
- 25. Chop the anchovies finely.
- 26. Drain the olives.
- 27. Drain the artichokes.
- 28. Cut the artichokes into quarters.
- 29. Cut the ham into thin strips.
- 30. Wash the mushrooms.
- 31. Trim the mushrooms (remove the dirty stem base).
- 32. Slice the mushrooms.
- 33. Halve the peppers if you wish.
- 34. Distribute all ingredients loosely over the pizza bases.
- 35. Slice the mozzarella very thinly.
- 36. Place the mozzarella slices on the pizzas.
- 37. Drizzle the pizzas with a little olive oil.
- 38. Preheat the oven to 200 degrees Celsius fan-forced.
- 39. Bake all pizzas together in the preheated oven.
- 40. Bake the pizzas for about 20 to 25 minutes.
