🍰 Red Currant Cream Towers

Ingredients
- 2 untreated lemons
- 1 tbsp vanilla sugar
- 3 tbsp sugar
- 250 g red currants
- 200 ml whipping cream
- 200 g quark
- 16 ladyfingers
Instructions
- 1. Wash the lemons under hot water and pat them dry with a cloth.
- 2. Finely grate the peel of one lemon.
- 3. Mix half of the lemon zest with the vanilla sugar.
- 4. Set aside the lemon-sugar mixture for later decoration.
- 5. Squeeze the juice from the grated lemon.
- 6. Add the lemon juice, the remaining lemon zest, and 2 tablespoons of sugar to a bowl.
- 7. Rinse the currants and pat them dry.
- 8. Strip the currants from the stems.
- 9. Mix the berries with the lemon mixture.
- 10. Press the berries down slightly with a fork.
- 11. Let the currants sit for about 15 minutes.
- 12. Whip the cream until stiff.
- 13. Stir the quark with the remaining sugar until smooth.
- 14. Gently fold the whipped cream into the quark.
- 15. Crush the ladyfinger biscuits in the blender.
- 16. Fill half of the biscuit crumbs into 4 glasses.
- 17. Cover the crumbs with half of the currants and some juice.
- 18. Add half of the quark-cream mixture on top.
- 19. Layer the remaining ingredients in the same way.
- 20. Finish the layers with the remaining quark-cream mixture.
- 21. Sprinkle the dessert with the reserved lemon-sugar mixture.
- 22. Place the glasses in the refrigerator for at least 30 minutes.
- 23. Serve the dessert after the chilling time.
