🍰 Crispy Apple and Bread Pudding

Ingredients
- 5 stale rolls
- 600 g tart apples (e.g. Boskop)
- Butter (for the pan)
- 6 tbsp sugar
- 0.5 tsp cinnamon
- 2 tsp grated lemon zest
- 70 g chopped almond kernels
- 400 ml milk
- 3 eggs
- 1 pinch salt
- 2 tbsp butter
- Powdered sugar (for dusting)
Instructions
- 1. Slice the bread rolls into thin pieces.
- 2. Peel the apples and cut them into quarters.
- 3. Remove the core from the apple quarters.
- 4. Cut the cored apples into thin wedges.
- 5. Grease a large baking dish or two small dishes with butter.
- 6. Place a first layer of bread slices into the dish.
- 7. Distribute a portion of the apple wedges evenly over the bread.
- 8. Sprinkle 3 tablespoons of sugar, cinnamon, lemon zest, and almonds over the layer.
- 9. Add another layer of bread and apple slices.
- 10. Whisk the milk, eggs, a pinch of salt, and the remaining sugar (about 3 tablespoons) in a separate bowl.
- 11. Pour the egg-milk mixture evenly over the layers in the dish.
- 12. Distribute small pats of butter on the surface.
- 13. Preheat the oven to 200 °C (180 °C for fan-assisted or gas mark 3).
- 14. Bake the pudding for about 40 minutes until golden brown.
- 15. Dust the finished pudding with powdered sugar before serving.
