  1. 1. Mix the flour with the ground almonds, the cold butter, the sugar, the flavoring, the egg yolk, and the salt.
  2. 2. Knead the ingredients quickly into a smooth dough.
  3. 3. Wrap the dough in cling film.
  4. 4. Place the dough in the refrigerator for at least one hour.
  5. 5. Put the whole almonds into boiling water.
  6. 6. Let the almonds steep in the water for about five minutes.
  7. 7. Drain the water.
  8. 8. Shock the almonds with cold water.
  9. 9. Place the almonds on kitchen paper and let them drip dry.
  10. 10. Squeeze the soft almond skins off the almonds.
  11. 11. Spread the peeled almonds out on a kitchen towel.
  12. 12. Let the almonds dry completely.
  13. 13. Take the dough out of the refrigerator.
  14. 14. Divide the dough into 20 to 25 equal pieces.
