  1. 1. Separate the eggs. Carefully separate the yolks from the whites.
  2. 2. Whip the egg whites with a pinch of salt until stiff peaks form.
  3. 3. Mix the egg yolks with lemon juice and a small amount of sugar.
  4. 4. Puree half of the raspberries and sweeten to taste.
  5. 5. Slice the remaining whole raspberries and the banana.
  6. 6. Combine the berry puree, the whole raspberries, and the banana slices.
  7. 7. Heat some oil in a non-stick frying pan.
  8. 8. Pour the yolk mixture into the hot pan and fry briefly.
  9. 9. Gently fold the stiffly beaten egg whites into the yolk mixture.
  10. 10. Pour the egg mixture back into the pan and cook the omelette until golden brown.
  11. 11. Place the finished omelette on a plate.
  12. 12. Top with the prepared fruit mixture.
