🍽️ Marinated Pork Fillet Skewers with Chili Tomato Sauce

Ingredients
- 3 onions
- 3 garlic cloves
- salt
- pepper (from the mill)
- 2 tsp paprika powder (hot)
- 1 tbsp rapeseed oil
- 200 ml mineral water (sparkling)
- 400 g pork tenderloin
- 1 small red chili pepper
- 450 g ripe beefsteak tomatoes (3 ripe beefsteak tomatoes)
- 2 tbsp ketchup (homemade or store-bought)
- 1 tbsp balsamic vinegar
- 400 g green bell peppers (2 green bell peppers)
- 2 spring onions
Instructions
- 1. Peel the onions and cut them into coarse cubes.
- 2. Press the onion cubes through a garlic press into a large bowl.
- 3. Peel the garlic cloves and press them into the bowl as well.
- 4. Season the mixture generously with salt, pepper, and paprika powder.
- 5. Stir rapeseed oil and mineral water into the spices using a whisk.
- 6. Rinse the pork fillet and pat it dry with kitchen paper.
- 7. Slice the meat into thin pieces.
- 8. Fold the meat slices into the onion juice mixture.
- 9. Cover the bowl with cling film.
- 10. Let the meat marinate in the refrigerator for about 4 hours.
- 11. Clean the chili pepper and halve it lengthwise.
- 12. Wash the chili halves and chop them very finely.
- 13. Pour boiling water over the tomatoes.
- 14. Let the tomatoes sit in the hot water for 1 to 2 minutes.
- 15. Rinse the tomatoes under cold water.
- 16. Peel the skin off the tomatoes.
- 17. Halve the peeled tomatoes and chop them coarsely.
- 18. Place the tomato cubes and the chopped chili into a bowl.
- 19. Puree the mixture coarsely with a hand blender.
- 20. Stir ketchup and balsamic vinegar into the tomato sauce.
- 21. Season the sauce with salt and pepper to taste.
- 22. Cover the sauce with cling film and chill it.
- 23. Halve the bell peppers and remove the core.
- 24. Wash the pepper pieces and cut them into cubes of about 2 cm.
- 25. Take the meat out of the marinade and let it drain briefly.
- 26. Thread alternating pieces of meat and pepper cubes onto 4 long skewers.
- 27. Grill the skewers on the hot grate for about 12 minutes.
- 28. Turn the skewers several times from all sides while grilling.
- 29. Stir the cold tomato sauce well.
- 30. Clean the spring onions and wash them.
- 31. Slice the spring onions, including the greens, into fine rings.
- 32. Sprinkle the onion rings over the sauce.
- 33. Serve the skewers together with the sauce.
