🥗 Spicy Lemon Chicken Bites with Fresh Salad

Ingredients
- 4 chicken breast fillets (approx. 150 g each)
- 1 chili pepper
- 1 untreated lemon
- 2 eggs
- salt
- pepper (from the mill)
- 4 tbsp flour
- 6 tbsp breadcrumbs
- fat (for frying)
- 150 g endive
- 1 handful lamb's lettuce
- 4 tbsp yogurt
- 1 tsp honey
- 2 tbsp white balsamic vinegar
- lemon juice
- salt
Instructions
- 1. Rinse the chicken breast fillets thoroughly and pat them dry with a kitchen towel.
- 2. Cut the chicken breast into bite-sized pieces.
- 3. Wash the chili pepper and remove the seeds.
- 4. Finely chop the chili pepper.
- 5. Finely grate the lemon zest.
- 6. Squeeze the juice from the lemon.
- 7. Mix the lemon zest and chopped chili with the eggs.
- 8. Season the chicken pieces with salt, pepper, and lemon juice.
- 9. Coat the chicken pieces in the flour.
- 10. Dip the floured chicken pieces into the egg-chili mixture.
- 11. Bread the chicken pieces with the breadcrumbs.
- 12. Heat the oil in a frying pan.
- 13. Fry the chicken pieces in batches in the hot oil.
- 14. Cook the chicken pieces for 3 to 4 minutes until golden brown.
- 15. Wash the salads thoroughly.
- 16. Remove the tough stems and coarse leaves from the salads.
- 17. Tear the salad leaves into small pieces if necessary.
- 18. Whisk the yogurt with the honey and balsamic vinegar.
- 19. Stir 2 to 3 tablespoons of water into the yogurt mixture.
- 20. Season the yogurt sauce with lemon juice and salt.
- 21. Fold the salad into the yogurt sauce.
- 22. Divide the salad among the plates.
- 23. Drain the fried chicken pieces on kitchen paper.
- 24. Place the chicken pieces on top of the salad.
- 25. Serve the dish immediately.
