🍽️ Spicy Beef Fillet with Pears and Herb Butter

Ingredients
- 700 g beef fillet (ready for kitchen)
- 2 tbsp vegetable oil
- 4 sprigs thyme
- 1 vanilla pod
- 1 red chili pepper
- 2 garlic cloves
- 2 ripe pears (e.g. Williams Christ)
- 2 tbsp sugar
- 150 ml dry white wine
- 100 g butter
- 0.25 tsp cardamom powder
- 1 pinch cinnamon powder
- sea salt (to taste)
- pepper (from the mill)
Instructions
- 1. Preheat the oven to 120 degrees Celsius with top and bottom heat.
- 2. Wash the meat and pat it dry with a kitchen towel.
- 3. Remove any sinews or fat edges from the meat.
- 4. Cut the meat into four or eight thick medallions.
- 5. Press the medallions slightly flat with the heels of your hands.
- 6. Heat oil in a pan and sear the meat on all sides.
- 7. Remove the meat from the pan and place it on a greased baking sheet.
- 8. Place the baking sheet into the preheated oven.
- 9. Cook the meat in the oven for 40 to 50 minutes until desired doneness.
- 10. Wash the thyme and shake it dry.
- 11. Slice the vanilla pod lengthwise.
- 12. Wash the chili pepper.
- 13. Peel the garlic and press it lightly.
- 14. Wash the pears.
- 15. Quarter the pears lengthwise.
- 16. Remove the core from the pears.
- 17. Cut the pear flesh into wedges.
- 18. Let the sugar caramelize in a pan.
- 19. Add the pears to the caramel and turn them in it.
- 20. Deglaze the caramel with the wine.
- 21. Let the mixture simmer briefly until the caramel has dissolved.
- 22. Let the pears cook down for about 5 minutes.
- 23. Melt the butter in a separate pan.
- 24. Add the spices, vanilla pod, thyme, chili pepper, garlic, sea salt, and pepper to the butter.
- 25. Turn the steaks in the spiced butter.
- 26. Remove the steaks from the pan.
- 27. Slice the steaks into portions.
- 28. Arrange the steaks with the herbs and spices on a wooden board.
- 29. Serve the pears separately alongside.
