  1. 1. Preheat the oven to 120 degrees Celsius with top and bottom heat.
  2. 2. Wash the meat and pat it dry with a kitchen towel.
  3. 3. Remove any sinews or fat edges from the meat.
  4. 4. Cut the meat into four or eight thick medallions.
  5. 5. Press the medallions slightly flat with the heels of your hands.
  6. 6. Heat oil in a pan and sear the meat on all sides.
  7. 7. Remove the meat from the pan and place it on a greased baking sheet.
  8. 8. Place the baking sheet into the preheated oven.
  9. 9. Cook the meat in the oven for 40 to 50 minutes until desired doneness.
  10. 10. Wash the thyme and shake it dry.
  11. 11. Slice the vanilla pod lengthwise.
  12. 12. Wash the chili pepper.
  13. 13. Peel the garlic and press it lightly.
  14. 14. Wash the pears.
  15. 15. Quarter the pears lengthwise.
  16. 16. Remove the core from the pears.
  17. 17. Cut the pear flesh into wedges.
  18. 18. Let the sugar caramelize in a pan.
  19. 19. Add the pears to the caramel and turn them in it.
  20. 20. Deglaze the caramel with the wine.
  21. 21. Let the mixture simmer briefly until the caramel has dissolved.
  22. 22. Let the pears cook down for about 5 minutes.
  23. 23. Melt the butter in a separate pan.
  24. 24. Add the spices, vanilla pod, thyme, chili pepper, garlic, sea salt, and pepper to the butter.
  25. 25. Turn the steaks in the spiced butter.
  26. 26. Remove the steaks from the pan.
  27. 27. Slice the steaks into portions.
  28. 28. Arrange the steaks with the herbs and spices on a wooden board.
  29. 29. Serve the pears separately alongside.
