🥗 Spicy Chicken with Fresh Salad

Ingredients
- 2 Onions
- 3 Garlic cloves
- 4 Piri-Piri (or red chili peppers)
- 2 Chicken (approx. 1.2 kg each)
- 6 tbsp Olive oil
- Salt
- Pepper (from the mill)
- 1 tbsp Paprika powder (sweet)
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Peel the onions and garlic.
- 3. Cut the onions and garlic into coarse cubes.
- 4. Remove the seeds from the Piri-Piri chilies.
- 5. Finely chop the deseeded chilies.
- 6. Place the onions, garlic, and chili into a bowl.
- 7. Add the olive oil, salt, pepper, and paprika powder.
- 8. Mix everything well together.
- 9. Wash the chicken pieces.
- 10. Pat the chicken dry with a kitchen towel.
- 11. Cut the chicken into 8 pieces using poultry shears.
- 12. Rub the chicken pieces with the chili mixture.
- 13. Place the chicken in a large casserole dish.
- 14. Make sure the skin side is facing upwards.
- 15. Add the onion and garlic pieces to the chicken.
- 16. Cook the chicken in the oven for 50 to 60 minutes.
- 17. Brush the chicken with the oil repeatedly during the cooking time.
- 18. Place two chicken pieces on each plate.
- 19. Serve the chicken with a rocket and radish salad.
