🍝 Spicy Pasta Salad with Tomato, Capers, and Arugula

Ingredients
- 400 g whole wheat pasta (e.g. Tortiglioni)
- salt
- 4 tbsp white balsamic vinegar
- 2 tbsp tomato paste
- 1 tsp red pesto
- pepper
- 600 g ripe tomatoes
- 75 g arugula
- 20 g capers
- 50 g shaved Parmesan
Instructions
- 1. Boil plenty of water in a pot and add plenty of salt.
- 2. Cook the pasta in this salted water until it is al dente.
- 3. Drain the pasta and let it drain well.
- 4. Let the pasta cool down until it is cold.
- 5. Add balsamic vinegar, tomato paste, Pesto Rosso, and some pepper to a large bowl.
- 6. Mix the ingredients in the bowl well together.
- 7. Add the cold pasta to the sauce and mix everything well.
- 8. Wash the tomatoes thoroughly.
- 9. Remove the hard stems and seeds from the tomatoes.
- 10. Cut the tomatoes into small cubes.
- 11. Wash the arugula thoroughly.
- 12. Remove wilted or unattractive leaves from the arugula.
- 13. Shake the arugula dry to remove excess water.
- 14. Add the cubed tomatoes to the pasta mixture.
- 15. Add the dry arugula to the pasta mixture.
- 16. Add the capers to the pasta mixture.
- 17. Mix all ingredients briefly and gently together.
- 18. Season the salad with salt.
- 19. Season the salad with additional pepper.
- 20. Plate the salad onto plates.
- 21. Sprinkle the finished salad with grated Parmesan.
- 22. Serve the salad immediately.
