  1. 1. Rinse the lemon balm under running water.
  2. 2. Shake the leaves dry.
  3. 3. Pluck the leaves off the stems.
  4. 4. Cut the lemon balm into fine strips.
  5. 5. Rinse the lime under hot water.
  6. 6. Dry the lime with a cloth.
  7. 7. Grate 2 teaspoons of zest from the lime using a fine grater.
  8. 8. Cut the lime in half.
  9. 9. Squeeze the juice out of the lime.
  10. 10. Put quark and yogurt into a bowl.
  11. 11. Stir the quark and yogurt until smooth.
  12. 12. Add 3 to 4 tablespoons of lime juice to the mixture.
  13. 13. Add the grated lime zest.
  14. 14. Add harissa (a spicy paste made from dried chili peppers).
  15. 15. Season the dip with salt.
  16. 16. Stir in the cut lemon balm leaves.
