🍽️ Spicy Herb Mustard

Ingredients
- 240 g yellow mustard seeds
- 0.25 tsp salt
- 1 tbsp lemon juice
- 150 ml white wine vinegar
- 2 tbsp agave syrup
- 4 sprigs thyme
- 4 sprigs rosemary
Instructions
- 1. Grind the mustard seeds into fine mustard powder. Use a mill or a mortar for this.
- 2. Put the mustard powder and the salt into a large bowl.
- 3. Bring 350 to 400 milliliters of water, lemon juice, white wine vinegar, and agave syrup to a boil together.
- 4. Let the liquid cool down for 5 to 10 minutes.
- 5. Stir the cooled liquid into the mustard powder.
- 6. Blend the mixture briefly with a hand blender.
- 7. If the mixture is too thick, add a little water and stir until creamy.
- 8. Wash the herbs and chop them finely.
- 9. Fold the chopped herbs into the mustard mixture.
- 10. Fill the mustard into boiled and clean screw-top jars.
- 11. Seal the jars tightly.
- 12. Store the mustard well chilled. It keeps unopened for about 5 to 6 weeks.
