🥗 Spicy Couscous Salad

Ingredients
- 1 shallot
- 300 ml classic vegetable broth
- 1 tsp sambal oelek
- 125 g couscous (instant)
- 1 lemon
- 1 pinch honey
- salt
- 1 tbsp oil
- 100 g small deep-sea shrimp (kitchen-ready)
- 100 g ripe avocado (0.5 ripe avocados)

Instructions
- 1. Peel the shallot and cut it into very small cubes.
- 2. Place the shallot cubes into a pot.
- 3. Pour 250 milliliters of broth over the shallots.
- 4. Stir in three quarters of a teaspoon of Sambal Oelek (spicy chili paste).
- 5. Bring the mixture to a boil while stirring.
- 6. Place the couscous into a heatproof bowl.
- 7. Pour the hot spiced broth directly over the couscous.
- 8. Let the couscous swell according to the instructions on the package.
- 9. Cut the lemon in half in the meantime.
- 10. Squeeze the lemon halves to extract the juice.
- 11. Set aside the remaining broth.
- 12. Add two tablespoons of lemon juice into a small bowl.
- 13. Add the remaining broth to the lemon juice.
- 14. Add some honey.
- 15. Season with salt.
- 16. Add oil.
- 17. Whisk everything vigorously until a homogeneous dressing is formed.
- 18. Rinse the shrimp briefly under cold water.
- 19. Pat the shrimp dry with kitchen paper.
- 20. Place the shrimp into a bowl.
- 21. Pour the prepared dressing over the shrimp.
- 22. Toss the shrimp so they are completely coated with the dressing.
- 23. Take one half of an avocado.
- 24. Carefully remove the pit.
- 25. Peel the avocado.
- 26. Cut the flesh into small cubes.
- 27. Place the avocado cubes immediately into a bowl.
- 28. Drizzle the avocado with one tablespoon of lemon juice.
- 29. Season the avocado lightly with pepper.
- 30. Fluff the swollen couscous with a fork.
- 31. Add the marinated shrimp to the couscous.
- 32. Add the cubed avocado to the couscous.
- 33. Gently fold everything together to mix the ingredients.
- 34. Taste the salad with the remaining Sambal Oelek.
- 35. Add more lemon juice if necessary.
- 36. Finally, season to taste with salt and pepper.
