🍽️ Spicy Chili Dip

Ingredients
- 1 shallot
- 1 garlic clove
- 2 red chili peppers
- 2 tbsp pink peppercorns
- 1 tbsp sunflower oil
- 150 ml vegetable broth
- 150 ml whipping cream
- 20 ml cognac
- salt
- 1 pinch brown sugar
- lime juice
Instructions
- 1. Peel the shallot and the garlic clove.
- 2. Finely chop the shallot and the garlic.
- 3. Wash the chili peppers.
- 4. Remove the stems and seeds from the chili peppers.
- 5. Slice the chili peppers into rings.
- 6. Set aside a small amount of the chili rings and peppercorns for garnish.
- 7. Heat oil in a pan.
- 8. Add the shallot, garlic, remaining chili rings, and peppercorns to the hot pan.
- 9. Sauté the ingredients until they look pale and fragrant.
- 10. Deglaze the pan with the broth.
- 11. Bring the mixture to a boil.
- 12. Add the cream and the cognac.
- 13. Simmer the sauce on low heat for about 10 minutes.
- 14. Stir occasionally.
- 15. Puree the sauce finely with a blender.
- 16. If necessary, let the sauce reduce a bit more until it is slightly thick.
- 17. Season the sauce with salt.
- 18. Season the sauce with sugar.
- 19. Season the sauce with lime juice.
- 20. Serve the dip.
- 21. Garnish the dip with the reserved chili rings and peppercorns.
