  6. 6. Set aside a small amount of the chili rings and peppercorns for garnish.
  7. 7. Heat oil in a pan.
  8. 8. Add the shallot, garlic, remaining chili rings, and peppercorns to the hot pan.
  9. 9. Sauté the ingredients until they look pale and fragrant.
  10. 10. Deglaze the pan with the broth.
  11. 11. Bring the mixture to a boil.
  12. 12. Add the cream and the cognac.
  13. 13. Simmer the sauce on low heat for about 10 minutes.
