🍽️ Spicy Avocado Fruit Salad with Crêpes

Ingredients
- 125 g flour
- 1 pinch salt
- 2 eggs (size S)
- 25 g melted butter
- 250 ml milk
- vegetable oil (for baking)
- 1 baby pineapple
- 1 papaya
- 1 avocado
- 2 tbsp lemon juice
- hot pepper
- 2 tbsp lime juice
- 1 pinch salt
- 1 pinch nutmeg
- 1 pinch sugar
- 2 tbsp oil
- 4 tbsp corn kernels (from the can)
Instructions
- 1. Mix the flour with a pinch of salt in a bowl.
- 2. Whisk the eggs in a separate bowl.
- 3. Stir the butter and milk into the eggs.
- 4. Add the egg-milk mixture to the flour and stir until smooth.
- 5. Let the dough rest for 30 minutes.
- 6. Remove the tough skin and eyes from the pineapple.
- 7. Cut the pineapple into quarters and then into bite-sized pieces.
- 8. Cut the papaya in half lengthwise.
- 9. Remove the seeds from the papaya.
- 10. Peel the papaya and cut it into pieces.
- 11. Cut the avocado in half lengthwise and remove the pit.
- 12. Peel the avocado halves.
- 13. Cut the avocado into pieces.
- 14. Mix the avocado pieces with one tablespoon of lemon juice.
- 15. Slice the chili pepper lengthwise.
- 16. Remove the seeds and white pith from the chili pepper.
- 17. Rinse the chili pepper under running water.
- 18. Finely chop the chili pepper.
- 19. Whisk the remaining lemon juice, lime juice, salt, nutmeg, sugar, and oil in a bowl.
- 20. Add the pineapple, papaya, avocado, chili, and corn to the marinade.
- 21. Toss everything well and let the salad marinate.
- 22. Heat some oil in a pan.
- 23. Fry thin crêpes from the dough.
- 24. Serve the crêpes together with the avocado fruit salad.
