Ingredients
- 1 handful cilantro leaves
- 1 handful parsley
- 2 red onions
- 2 garlic cloves
- 1 bay leaf
- 0.5 tsp dried chili flakes
- 0.5 tsp peppercorns
- 50 ml wine vinegar
- 60 ml olive oil
- 1 tbsp lemon juice
- salt
Instructions
- 1. Rinse the cilantro and parsley leaves under running water.
- 2. Shake the herbs dry.
- 3. Finely chop the cilantro and parsley.
- 4. Peel the onions.
- 5. Dice the onions finely.
- 6. Peel the garlic cloves.
- 7. Finely chop the garlic.
- 8. Place the bay leaf together with the chili flakes and peppercorns into a mortar.
- 9. Crush the spices finely in the mortar.
- 10. Transfer the crushed spices into a bowl.
- 11. Add the chopped herbs.
- 12. Add the diced onions.
- 13. Add the chopped garlic.
- 14. Add the vinegar to the mixture.
- 15. Add the oil to the mixture.
- 16. Stir all ingredients well together.
- 17. Squeeze the lemon juice into the sauce.
- 18. Season the sauce with salt.
- 19. Ideally, chill the sauce in the refrigerator overnight to let the flavors develop.
