  1. 1. Take the burdock roots out of the package and let them drain well.
  2. 2. Cut large pieces of the burdock roots in half lengthwise.
  3. 3. Remove the tough outer leaves from the radicchio.
  4. 4. Wash the radicchio thoroughly under running water.
  5. 5. Dry the radicchio in a salad spinner or with a kitchen towel.
  6. 6. Cut the radicchio into very thin strips.
  7. 7. Rinse the lemon balm under cold water.
  8. 8. Shake the balm dry to remove excess water.
  9. 9. Carefully pluck the small leaves from the stems.
  10. 10. Cut the lemon balm leaves into fine strips.
  11. 11. Pour the vegetable broth into a pot and heat it up.
  12. 12. Stir the sambal oelek (a spicy chili paste) into the hot broth.
  13. 13. Bring the spiced broth to a boil.
  14. 14. Add the prepared burdock roots to the boiling broth.
  15. 15. Reduce the heat to the lowest setting.
  16. 16. Cover the pot with a lid.
  17. 17. Let the burdock roots warm up over low heat.
  18. 18. Take a small bowl and add the white wine vinegar.
  19. 19. Add one tablespoon of water to the vinegar in the bowl.
  20. 20. Season the liquid with salt to taste.
  21. 21. Add freshly ground pepper.
  22. 22. Add some maple syrup for sweetness.
  23. 23. Drizzle hazelnut oil into the mixture.
  24. 24. Whisk everything in the bowl well with a fork or spoon.
  25. 25. Add the cut radicchio strips to the dressing mixture.
  26. 26. Add the cut lemon balm leaves.
  27. 27. Toss the salad well so that everything is evenly seasoned.
  28. 28. Divide the radicchio salad evenly onto two plates.
  29. 29. Take the warm burdock roots out of the broth.
  30. 30. Place the burdock roots on top of the radicchio salad.
  31. 31. Sprinkle the finished dish with roasted hazelnuts.
