🍽️ Spicy Burdock Root with Radicchio Salad

Ingredients
- 320 g burdock root (jar, drained weight)
- 200 g large radicchio (1 large radicchio)
- 6 sprigs lemon balm
- 3 tbsp classic vegetable broth
- 1 pinch sambal oelek
- 2 tsp white wine vinegar
- salt
- pepper
- 1 tsp maple syrup
- 1 tsp hazelnut oil
- 1 tsp sliced hazelnut kernels
Instructions
- 1. Take the burdock roots out of the package and let them drain well.
- 2. Cut large pieces of the burdock roots in half lengthwise.
- 3. Remove the tough outer leaves from the radicchio.
- 4. Wash the radicchio thoroughly under running water.
- 5. Dry the radicchio in a salad spinner or with a kitchen towel.
- 6. Cut the radicchio into very thin strips.
- 7. Rinse the lemon balm under cold water.
- 8. Shake the balm dry to remove excess water.
- 9. Carefully pluck the small leaves from the stems.
- 10. Cut the lemon balm leaves into fine strips.
- 11. Pour the vegetable broth into a pot and heat it up.
- 12. Stir the sambal oelek (a spicy chili paste) into the hot broth.
- 13. Bring the spiced broth to a boil.
- 14. Add the prepared burdock roots to the boiling broth.
- 15. Reduce the heat to the lowest setting.
- 16. Cover the pot with a lid.
- 17. Let the burdock roots warm up over low heat.
- 18. Take a small bowl and add the white wine vinegar.
- 19. Add one tablespoon of water to the vinegar in the bowl.
- 20. Season the liquid with salt to taste.
- 21. Add freshly ground pepper.
- 22. Add some maple syrup for sweetness.
- 23. Drizzle hazelnut oil into the mixture.
- 24. Whisk everything in the bowl well with a fork or spoon.
- 25. Add the cut radicchio strips to the dressing mixture.
- 26. Add the cut lemon balm leaves.
- 27. Toss the salad well so that everything is evenly seasoned.
- 28. Divide the radicchio salad evenly onto two plates.
- 29. Take the warm burdock roots out of the broth.
- 30. Place the burdock roots on top of the radicchio salad.
- 31. Sprinkle the finished dish with roasted hazelnuts.
