Ingredients
- 1 Lemon
- 4 Sole fillets (approx. 130 g each)
- Salt
- 1 tsp red peppercorns
- 1 tsp black peppercorns
- 3 tbsp ghee
Instructions
- 1. Cut the lemon in half lengthwise.
- 2. Cut one of the lemon halves into wedges.
- 3. Squeeze the juice from the second lemon half.
- 4. Rinse the cod fillets under running water.
- 5. Pat the fillets dry with a kitchen towel.
- 6. Drizzle the fillets with the freshly squeezed lemon juice.
- 7. Lightly salt the fillets.
- 8. Put both types of pepper into a mortar.
- 9. Coarsely crush the pepper in the mortar.
- 10. Rub the fish fillets evenly on one side with the crushed pepper.
- 11. Heat the lard in a frying pan.
- 12. Place the fillets in the hot pan with the pepper side facing down.
- 13. Fry the fillets on this side for about 2 to 3 minutes until golden brown.
- 14. Turn the fillets over.
- 15. Finish cooking the fillets on the other side for another 2 to 3 minutes.
- 16. Serve the fillets together with the lemon wedges.
