🍝 Spicy Noodles with Vegetables

Ingredients
- 500 g Spaghetti
- Salt
- 1 red chili pepper
- 1 garlic clove
- 2 tbsp olive oil
- 600 g broccoli stalks
- 150 ml vegetable broth
- Salt
- Pepper (from the mill)
- 250 g cherry tomatoes
Instructions
- 1. Cook the noodles in salted water until al dente.
- 2. Wash the chili peppers.
- 3. Halve the chili peppers.
- 4. Remove the seeds and the white pith.
- 5. Cut the chili into thin strips.
- 6. Peel the garlic.
- 7. Finely chop the garlic.
- 8. Heat the oil in a pan.
- 9. Sauté the chili and garlic briefly in the hot oil.
- 10. Wash the broccoli.
- 11. Remove the tough stems and leaves.
- 12. Cut the broccoli into smaller pieces if necessary.
- 13. Add the broccoli to the chili in the pan.
- 14. Fry the broccoli for 1 to 2 minutes.
- 15. Deglaze the vegetables with the broth.
- 16. Season the dish with salt and pepper.
- 17. Simmer the vegetables for about 5 minutes until tender.
- 18. Wash the tomatoes.
- 19. Remove the tough stem ends.
- 20. Halve the tomatoes.
- 21. Add the tomatoes after 2 to 3 minutes of cooking time.
- 22. Toss the drained noodles into the pan.
- 23. Taste and adjust the seasoning.
- 24. Serve the noodles.
- 25. Grate Parmesan cheese over the top if desired.
