  1. 1. Peel the shallot and cut it into fine cubes.
  2. 2. Peel the ginger and grate it finely.
  3. 3. Wash the chili pepper, remove the stem, and chop it finely.
  4. 4. Peel the carrots and the potato and cut them into small pieces.
  5. 5. Heat the butter in a pot.
  6. 6. Sauté the shallot over medium heat.
  7. 7. Add the ginger and half of the chili pepper and sauté briefly.
  8. 8. Add the carrot and potato pieces and season with salt.
  9. 9. Simmer the vegetables covered over low heat for about 10 minutes.
  10. 10. Wash the oranges thoroughly with hot water and pat them dry.
  11. 11. Zest the oranges.
  12. 12. Squeeze the juice from the oranges.
  13. 13. Add the vegetable broth and the orange zest to the vegetables.
  14. 14. Let the soup simmer for another 10 minutes.
  15. 15. Wash the coriander and shake it dry.
  16. 16. Pick the leaves off the coriander stems.
  17. 17. Blend the soup finely with an immersion blender.
  18. 18. Stir in the orange juice and the sour cream.
  19. 19. Season the soup with salt and pepper to taste.
  20. 20. Fill the soup into bowls.
  21. 21. Garnish the bowls with coriander and the remaining chili pepper.
  22. 22. Serve the soup.
