🍲 Spicy Carrot and Ginger Soup with Orange Zest

Ingredients
- 1 shallot
- 30 g ginger (1 piece)
- 1 red chili pepper
- 4 carrots
- 1 floury potato
- 15 g butter (1 tbsp)
- salt
- 2 organic oranges
- 600 ml vegetable broth
- 4 sprigs cilantro
- 40 g sour cream (2 tbsp)

Instructions
- 1. Peel the shallot and cut it into fine cubes.
- 2. Peel the ginger and grate it finely.
- 3. Wash the chili pepper, remove the stem, and chop it finely.
- 4. Peel the carrots and the potato and cut them into small pieces.
- 5. Heat the butter in a pot.
- 6. Sauté the shallot over medium heat.
- 7. Add the ginger and half of the chili pepper and sauté briefly.
- 8. Add the carrot and potato pieces and season with salt.
- 9. Simmer the vegetables covered over low heat for about 10 minutes.
- 10. Wash the oranges thoroughly with hot water and pat them dry.
- 11. Zest the oranges.
- 12. Squeeze the juice from the oranges.
- 13. Add the vegetable broth and the orange zest to the vegetables.
- 14. Let the soup simmer for another 10 minutes.
- 15. Wash the coriander and shake it dry.
- 16. Pick the leaves off the coriander stems.
- 17. Blend the soup finely with an immersion blender.
- 18. Stir in the orange juice and the sour cream.
- 19. Season the soup with salt and pepper to taste.
- 20. Fill the soup into bowls.
- 21. Garnish the bowls with coriander and the remaining chili pepper.
- 22. Serve the soup.
