🍽️ Spicy Indian Tomato Soup

Ingredients
- 1 onion
- 20 g ginger
- 3 garlic cloves
- 1 stalk lemongrass
- 4 chili peppers (more or less to taste)
- 1 red bell pepper
- 500 g tomatoes
- 2 tbsp ghee
- 1 tsp turmeric
- 750 ml vegetable broth
- 1 lime (juice)
- 1 tsp garam masala
- salt
Instructions
- 1. Peel the onion, ginger, and garlic clove and chop everything very finely.
- 2. Pound the lemongrass with the flat side of a knife until it becomes soft. Rinse the chilies, optionally remove the seeds, and slice them into thin rings.
- 3. Wash the bell pepper, remove the core, and cut it into triangular pieces. Remove the tough stem ends from the tomatoes and cut them into eighths.
- 4. Heat the ghee in a large pot. Sauté the onion, ginger, chili peppers, and garlic until translucent. Sprinkle the turmeric over them, add the lemongrass, and sauté briefly.
- 5. Deglaze with the broth, add the tomatoes and bell pepper, and let the soup simmer gently for about 10 minutes. Season with lime juice, garam masala, and salt. Serve the soup with flatbread, for example.
