  2. 2. Pluck the leaves from the stems and chop them roughly.
  3. 3. Stir the chopped parsley into the yogurt in a bowl.
  4. 4. Season the yogurt mixture with salt and pepper.
  5. 5. Place the bowl in a cool spot until you are ready to serve the skewers.
  6. 6. Halve the bell pepper lengthwise and remove the core.
  7. 7. Rinse the pepper halves under running water.
  8. 8. Cut the flesh into fine cubes.
  9. 9. Place the pepper cubes into a second bowl.
  10. 10. Peel the garlic cloves.
  11. 11. Press the garlic through a press directly onto the pepper cubes.
  12. 12. Halve the chili pepper lengthwise and remove the inside.
  13. 13. Rinse the chili pepper.
  14. 14. Chop the chili pepper very finely.
  15. 15. Add the minced meat to the pepper and garlic mixture.
  16. 16. Add the finely chopped chili.
  17. 17. Sprinkle both types of paprika powder over the mixture.
  18. 18. Knead the ingredients into a firm dough using the beaters of a hand mixer.
  19. 19. Season the minced meat dough generously with salt and pepper.
  20. 20. Moisten your hands with a little water.
  21. 21. Shape the dough on the work surface into a long, thin roll.
  22. 22. Cut the roll into eight pieces using a knife.
  23. 23. Each piece should be about ten centimeters long and two to three centimeters thick.
  24. 24. Place the skewers into a large aluminum foil tray.
  25. 25. Brush the skewers all around with oil.

  27. 27. Place the skewers on the hot grill.
  28. 28. Grill the skewers for about eight to ten minutes.
  29. 29. Turn the skewers once halfway through the cooking time.
  30. 30. Serve the grilled skewers together with the cold yogurt dip.
