Ingredients
- 1 preserved lemon (jar)
- 2 garlic cloves
- 50 g red chili peppers
- 0.5 tsp cumin
- 0.5 tsp coriander seeds
- 80 ml olive oil
- salt
Instructions
- 1. Cut the lemon in half.
- 2. Scrape out the lemon pulp.
- 3. Place the lemon pulp into a mortar.
- 4. Peel the garlic cloves.
- 5. Add the garlic cloves to the lemon pulp in the mortar.
- 6. Wash the chili peppers thoroughly.
- 7. Cut the chili peppers in half lengthwise.
- 8. Remove the seeds from the chili peppers if you prefer it less spicy.
- 9. Add the chili peppers, cumin, coriander, lemon pulp, and garlic to the mortar.
- 10. Pound all ingredients into a fine paste.
- 11. Slowly pour in the olive oil while pounding.
- 12. Continue stirring until the paste becomes creamy.
- 13. Season the paste with salt to finish.
