  1. 1. Peel the garlic clove and chop it very finely.
  2. 2. Cut the leek lengthwise into two halves.
  3. 3. Wash the leek thoroughly and cut it into narrow strips about five centimeters long.
  4. 4. Wash the celery and the carrots.
  5. 5. Remove the tough parts and cut the vegetables into narrow strips about five centimeters long.
  6. 6. Shake the celery greens dry and set them aside.
  7. 7. Remove the skin and the tough core of the pineapple.
  8. 8. Cut the pineapple lengthwise into eight pieces.
  9. 9. Remove the tough core from each piece.
  10. 10. Cut the pineapple pieces into thin batons.
  11. 11. Heat the rapeseed oil in a wok or a large frying pan.
  12. 12. Add the garlic, leek, celery, and carrots to the pan.
  13. 13. Fry the vegetables over medium heat, stirring constantly, for a short time.
  14. 14. Add the pineapple pieces and fry them briefly as well.
  15. 15. Pour in the vegetable broth.
  16. 16. Let everything cook over medium heat, stirring frequently, for about five minutes.
  17. 17. Cook the glass noodles in salted water as indicated on the package.
  18. 18. Rinse the coriander plant.
  19. 19. Shake the leaves dry.
  20. 20. Pluck the coriander leaves from the stems.

  24. 24. Add Sambal Oelek (a spicy chili paste).
  25. 25. Salt the mixture to taste.
  26. 26. Fold the chopped celery greens into the vegetables.
  27. 27. Fold half of the coriander leaves into the vegetables.
  28. 28. Drain the noodles.
  29. 29. Add two-thirds of the chopped peanuts to the noodles.
  30. 30. Add the noodles to the pineapple-vegetable mixture.
  31. 31. Season the dish with salt.
  32. 32. Add sesame oil and mix everything well.
  33. 33. Garnish the dish with the remaining coriander leaves.
  34. 34. Sprinkle the remaining peanuts over the top.
  35. 35. Serve the noodles hot.
