🍽️ Spicy Noodles with Pineapple and Vegetables

Ingredients
- 1 clove garlic
- 250 g leek (1 stalk)
- 300 g celery with greens (4 stalks)
- 300 g carrots (3 carrots)
- 800 g ripe pineapple (1 ripe pineapple)
- 1 tbsp rapeseed oil
- 50 ml classic vegetable broth
- 150 g wide glass noodles
- salt
- 6 sprigs cilantro
- 50 g roasted salted peanuts
- 4 tbsp light soy sauce
- 1 pinch sambal oelek (a little more to taste)
- 1 tsp dark sesame oil
Instructions
- 1. Peel the garlic clove and chop it very finely.
- 2. Cut the leek lengthwise into two halves.
- 3. Wash the leek thoroughly and cut it into narrow strips about five centimeters long.
- 4. Wash the celery and the carrots.
- 5. Remove the tough parts and cut the vegetables into narrow strips about five centimeters long.
- 6. Shake the celery greens dry and set them aside.
- 7. Remove the skin and the tough core of the pineapple.
- 8. Cut the pineapple lengthwise into eight pieces.
- 9. Remove the tough core from each piece.
- 10. Cut the pineapple pieces into thin batons.
- 11. Heat the rapeseed oil in a wok or a large frying pan.
- 12. Add the garlic, leek, celery, and carrots to the pan.
- 13. Fry the vegetables over medium heat, stirring constantly, for a short time.
- 14. Add the pineapple pieces and fry them briefly as well.
- 15. Pour in the vegetable broth.
- 16. Let everything cook over medium heat, stirring frequently, for about five minutes.
- 17. Cook the glass noodles in salted water as indicated on the package.
- 18. Rinse the coriander plant.
- 19. Shake the leaves dry.
- 20. Pluck the coriander leaves from the stems.
- 21. Chop the peanuts coarsely.
- 22. Chop the reserved celery greens coarsely.
- 23. Season the pineapple-vegetable mixture with soy sauce.
- 24. Add Sambal Oelek (a spicy chili paste).
- 25. Salt the mixture to taste.
- 26. Fold the chopped celery greens into the vegetables.
- 27. Fold half of the coriander leaves into the vegetables.
- 28. Drain the noodles.
- 29. Add two-thirds of the chopped peanuts to the noodles.
- 30. Add the noodles to the pineapple-vegetable mixture.
- 31. Season the dish with salt.
- 32. Add sesame oil and mix everything well.
- 33. Garnish the dish with the remaining coriander leaves.
- 34. Sprinkle the remaining peanuts over the top.
- 35. Serve the noodles hot.
