  1. 1. Rinse the chicken breast under cold water.
  2. 2. Pat the meat dry with a kitchen towel.
  3. 3. Cut the chicken meat into approx. 2 cm cubes.
  4. 4. Wash the bell peppers thoroughly.
  5. 5. Halve the bell peppers lengthwise.
  6. 6. Remove the inside (seeds and ribs) of the pepper.
  7. 7. Cut the pepper into approx. 2 cm cubes as well.
  8. 8. Clean the mushrooms and remove the stem base if necessary.
  9. 9. Thread chicken, pepper, and mushroom cubes onto the skewers alternately.
  10. 10. Use all prepared ingredients for the skewers.
  11. 11. Thread a bay leaf onto each skewer at the end.
  12. 12. Grind the spices and herbs for the marinade finely in a mortar.
  13. 13. Mix the ground spice mixture with the oil.
  14. 14. Add the lime juice to the marinade.
  15. 15. Stir in the lemon or lime zest.
  16. 16. Brush the chicken skewers evenly with the marinade.
  17. 17. Let the skewers marinate for approx. 30 minutes.
  18. 18. Preheat the grill.
  19. 19. Place the skewers on the hot grill.
  20. 20. Grill the skewers for 4 to 5 minutes from each side.
  21. 21. Serve the skewers immediately while hot.
