  1. 1. Rinse the shrimp under running water and pat them dry with a kitchen towel.

  3. 3. Mix 2 tablespoons of lime juice with 1 liter of salted water in a pot.
  4. 4. Bring the liquid to a boil.
  5. 5. Add the shrimp to the boiling water and bring it back to a boil once.
  6. 6. Remove the shrimp from the water.
  7. 7. Dip the shrimp briefly into ice-cold water.
  8. 8. Let the shrimp drain well afterwards.
  9. 9. Mix the shrimp with the remaining lime juice in a bowl.
  10. 10. Let the shrimp marinate in the refrigerator for 1 hour.
  11. 11. Peel the onion while waiting.
  12. 12. Dice the onion finely.
  13. 13. Halve the chili pepper lengthwise.
  14. 14. Remove the seeds from the chili pepper.
  15. 15. Rinse the chili pepper.
  16. 16. Dice the chili pepper very finely.
  17. 17. Wash the coriander.
  18. 18. Shake the coriander dry.
  19. 19. Pluck the coriander leaves from the stems.
  20. 20. Chop the coriander leaves finely.

  22. 22. Halve the cucumber lengthwise.
  23. 23. Core the cucumber halves.
  24. 24. Cut the cucumber flesh into small cubes.
  25. 25. Mix the diced onion, chili, coriander, and cucumber with the shrimp.
  26. 26. Add tomatoes or ketchup.
  27. 27. Season the mixture with salt and pepper.
  28. 28. Let the shrimp rest for another 15 to 20 minutes.

  30. 30. Remove the pit from the avocado.
  31. 31. Separate the avocado flesh from the skin.
  32. 32. Place the avocado flesh in a tall container.
  33. 33. Add red wine vinegar.
  34. 34. Add yogurt.
  35. 35. Season with salt and pepper.
  36. 36. Puree the avocado until creamy using a hand blender.
  37. 37. Fill the avocado cream into 6 glasses.
  38. 38. Distribute the shrimp over the avocado cream.
  39. 39. Garnish the dish with some fresh coriander.
  40. 40. Serve the shrimp immediately.
