🍽️ Spicy Shrimp on Avocado Cream

Ingredients
- 375 g shrimp (ready for cooking)
- 1 large lime
- salt
- 1 red onion
- 1 red chili pepper
- 0.5 bunch cilantro
- 0.5 cucumber
- 75 ml tomato puree (or ketchup)
- pepper
- 200 g avocado (1 avocado)
- 1 tbsp red wine vinegar
- 4 tbsp yogurt (0.3% fat)
Instructions
- 1. Rinse the shrimp under running water and pat them dry with a kitchen towel.
- 2. Squeeze the lime.
- 3. Mix 2 tablespoons of lime juice with 1 liter of salted water in a pot.
- 4. Bring the liquid to a boil.
- 5. Add the shrimp to the boiling water and bring it back to a boil once.
- 6. Remove the shrimp from the water.
- 7. Dip the shrimp briefly into ice-cold water.
- 8. Let the shrimp drain well afterwards.
- 9. Mix the shrimp with the remaining lime juice in a bowl.
- 10. Let the shrimp marinate in the refrigerator for 1 hour.
- 11. Peel the onion while waiting.
- 12. Dice the onion finely.
- 13. Halve the chili pepper lengthwise.
- 14. Remove the seeds from the chili pepper.
- 15. Rinse the chili pepper.
- 16. Dice the chili pepper very finely.
- 17. Wash the coriander.
- 18. Shake the coriander dry.
- 19. Pluck the coriander leaves from the stems.
- 20. Chop the coriander leaves finely.
- 21. Peel the cucumber.
- 22. Halve the cucumber lengthwise.
- 23. Core the cucumber halves.
- 24. Cut the cucumber flesh into small cubes.
- 25. Mix the diced onion, chili, coriander, and cucumber with the shrimp.
- 26. Add tomatoes or ketchup.
- 27. Season the mixture with salt and pepper.
- 28. Let the shrimp rest for another 15 to 20 minutes.
- 29. Halve the avocado during this time.
- 30. Remove the pit from the avocado.
- 31. Separate the avocado flesh from the skin.
- 32. Place the avocado flesh in a tall container.
- 33. Add red wine vinegar.
- 34. Add yogurt.
- 35. Season with salt and pepper.
- 36. Puree the avocado until creamy using a hand blender.
- 37. Fill the avocado cream into 6 glasses.
- 38. Distribute the shrimp over the avocado cream.
- 39. Garnish the dish with some fresh coriander.
- 40. Serve the shrimp immediately.
