🍽️ Spicy Pea Soup with Radish Salad

Ingredients
- 1 red onion
- 1 garlic clove
- 3 cm fresh ginger
- 2 tbsp vegetable oil
- 250 g peas (fresh or frozen)
- 400 ml vegetable broth
- 400 ml coconut milk
- 1 untreated lime (juice and zest)
- salt
- pepper (from the mill)
- 100 g radishes
- 1 tbsp sesame oil
- 1 pinch brown sugar
- 1 handful cilantro
- 1 tsp wasabi paste
Instructions
- 1. Heat a pot over medium heat and add the oil.
- 2. Peel the onion and the garlic.
- 3. Cut the onion in half and slice it into thin strips.
- 4. Finely chop the garlic.
- 5. Peel the ginger and dice it into small cubes.
- 6. Add half of the onion strips, the garlic, and the ginger to the hot pot.
- 7. Sauté the vegetables until they become translucent.
- 8. Stir the peas into the vegetable mixture.
- 9. Pour in the vegetable broth and the coconut milk.
- 10. Add one tablespoon of lime juice and the grated zest of one lime.
- 11. Season the soup with salt and pepper.
- 12. Let the soup simmer on low heat for about 15 minutes.
- 13. Thoroughly wash the radishes.
- 14. Remove the green stems and roots from the radishes.
- 15. Slice the radishes into very thin strips.
- 16. Add the remaining onion strips to the radishes.
- 17. Add one tablespoon of lime juice and sesame oil.
- 18. Season the salad with sugar, salt, and pepper.
- 19. Mix all the salad ingredients well together.
- 20. Rinse the cilantro leaves briefly under cold water.
- 21. Shake the cilantro leaves dry.
- 22. Roughly chop the cilantro leaves.
- 23. Set the salad aside.
- 24. Puree the soup finely with a hand blender.
- 25. Check the consistency of the soup.
- 26. If the soup is too thick, add a little more broth.
- 27. If the soup is too thin, let it simmer a bit longer to reduce.
- 28. Spice up the soup with wasabi.
- 29. Add more lime juice if necessary.
- 30. Finally, taste the soup and adjust with salt and pepper.
- 31. Fill the hot soup into bowls.
- 32. Garnish the soup with the radish salad.
- 33. Serve the soup immediately.
