  1. 1. Rinse the chicken wings under cold water and pat them completely dry with kitchen paper.
  2. 2. Place the dry wings in a shallow dish.
  3. 3. Whisk all marinade ingredients together in a separate bowl, excluding the lime.
  4. 4. Press the garlic directly into the marinade and stir it in.
  5. 5. Pour the marinade evenly over the chicken wings.
  6. 6. Cover the dish and place it in a cool spot to marinate the wings overnight.
  7. 7. Turn the wings once during the marinating time to ensure even flavor penetration.
  8. 8. Line a baking tray with aluminum foil and lightly grease it with oil.
  9. 9. Remove the chicken wings from the marinade and place them on the prepared tray.
  10. 10. Scrape off excess marinade from the wings to prevent burning.
  11. 11. Preheat the oven to 220 degrees Celsius.
  12. 12. Bake the wings for 15 minutes in the preheated oven.
  13. 13. Remove the tray and turn the wings over.
  14. 14. Continue roasting the wings for another 5 minutes.
  15. 15. Now brush the wings with the remaining marinade.
  16. 16. Turn the wings over again and brush the other side with the marinade as well.
  17. 17. Return the wings to the oven and bake them for 10 more minutes.
  18. 18. Wash the tomatoes under running water.
  19. 19. Pour boiling water over the tomatoes briefly to blanch them.
  20. 20. Shock the tomatoes immediately in cold water to stop the cooking process.
  21. 21. Peel the skin off the tomatoes.
  22. 22. Quarter the peeled tomatoes and remove the core.
  23. 23. Finely chop the tomato flesh.
  24. 24. Peel the garlic and press it into a bowl.
  25. 25. Halve the chili peppers lengthwise and remove the seeds.
  26. 26. Finely chop the chili peppers.
  27. 27. Mix the chopped tomatoes, garlic, and chili peppers in a bowl.
  28. 28. Squeeze the lime juice over the sauce.
  29. 29. Season the sauce with salt and pepper to taste.
  30. 30. Serve the finished chicken wings together with the fresh sauce and lime wedges.
