🍽️ Spicy Pan-Fried Shrimp

Ingredients
- 1 kg shrimp (peeled and deveined)
- 1 tbsp dark soy sauce
- 2 tomatoes
- 1 tbsp flour
- 1 tsp sweet paprika powder
- 50 g butter
- salt
- pepper (from the mill)
- 1 sprig thyme
- 1 sprig rosemary
- 0.25 l broth
- 1 tbsp oyster sauce
- 20 g cold butter
- fresh herbs (for garnish)
Instructions
- 1. Rinse the shrimp thoroughly and pat them dry with a kitchen towel.
- 2. Marinate the shrimp briefly in the soy sauce.
- 3. Blanch the tomatoes in boiling water for a few seconds to loosen the skin.
- 4. Shock the tomatoes in cold water and peel off the skin.
- 5. Quarter the tomatoes, remove the core, and dice the flesh into small cubes.
- 6. Remove the shrimp from the marinade and let them drain briefly.
- 7. Toss the shrimp in the flour and paprika powder mixture until lightly coated.
- 8. Heat the butter in a large frying pan over medium-high heat.
- 9. Fry the shrimp for about 4 minutes until golden brown and cooked through.
- 10. Season the shrimp with salt and pepper.
- 11. Remove the cooked shrimp from the pan and set them aside.
- 12. Add the diced tomatoes, thyme, and rosemary to the remaining fat in the pan and sauté briefly.
- 13. Deglaze the pan with the broth and oyster sauce.
- 14. Let the sauce reduce slightly until it thickens a bit.
- 15. Stir in the cold butter to emulsify and enrich the sauce.
- 16. Finally, adjust the seasoning of the sauce with salt and pepper.
- 17. Arrange the shrimp on a serving plate.
- 18. Pour the hot sauce over the shrimp.
- 19. Garnish the dish with fresh herbs and serve immediately.
