🍽️ Marinated Sheep's Cheese Skewers with Sesame and Fennel

Ingredients
- 1 tbsp light sesame seeds
- 1 tbsp black sesame seeds
- 1 tsp fennel seeds
- 200 g feta cheese (9 % fat absolute)
- 1 organic lemon
- 2 tbsp olive oil
- salt
- 1 tsp coarsely ground black pepper
- 4 sprigs mint
- 200 g cucumber (0.5 cucumbers)
- 10 green olives (pitted)
Instructions
- 1. Put sesame seeds and fennel seeds into a non-stick pan.
- 2. Toast the seeds in the pan without oil.
- 3. Remove the pan from the heat and let the seeds cool down completely.
- 4. Take the sheep's cheese out of the package and let the liquid drain off.
- 5. Cut the cheese into 20 roughly equal-sized cubes.
- 6. Rinse the lemon under hot water.
- 7. Dry the lemon with a cloth.
- 8. Grate the lemon peel finely.
- 9. Squeeze half of the lemon.
- 10. Use the rest of the lemon for something else.
- 11. Measure exactly one tablespoon of lemon juice.
- 12. Take a large bowl.
- 13. Put the cooled fennel seeds into the bowl.
- 14. Put the cooled sesame seeds into the bowl.
- 15. Put the measured lemon juice into the bowl.
- 16. Put the grated lemon peel into the bowl.
- 17. Put oil into the bowl.
- 18. Put a pinch of salt into the bowl.
- 19. Put pepper into the bowl.
- 20. Mix all ingredients in the bowl well.
- 21. Put the sheep's cheese cubes into the marinade.
- 22. Turn the cheese cubes so they are completely covered with the marinade.
- 23. Cover the bowl.
- 24. Place the bowl in the refrigerator.
- 25. Let the cheese marinate for 4 hours.
- 26. Wash the mint.
- 27. Shake the mint dry.
- 28. Pluck the mint leaves from the stems.
- 29. Chop the mint leaves finely.
- 30. Take the marinated cheese cubes out of the refrigerator.
- 31. Mix the chopped mint with the cheese cubes.
- 32. Take half a cucumber.
- 33. Peel the cucumber partially.
- 34. Halve the cucumber lengthwise.
- 35. Remove the core with a spoon.
- 36. Cut the cucumber into cubes of about 1 cm size.
- 37. Take the olives.
- 38. Let the olives drain in a small sieve.
- 39. Halve the olives.
- 40. Take 10 skewers.
- 41. Alternately thread cucumber cubes and cheese cubes onto the skewers.
- 42. Thread the olives onto the skewers as well.
- 43. Serve the skewers.
