  1. 1. Peel the onion and garlic and chop them finely.
  2. 2. Peel the carrots and celery and dice them into small pieces.
  3. 3. Wash the leek, trim the hard ends, and slice it into rings.
  4. 4. Clean the mushrooms and cut them into quarters.
  5. 5. Heat the butter in a large pot.
  6. 6. Sauté the prepared vegetables in it for about 5 minutes.
  7. 7. Pour in the broth and add the peas to the pot.
  8. 8. Rinse the herbs and shake them dry.
  9. 9. Tie the herbs together with kitchen twine.
  10. 10. Add the herb bundle and the bay leaf to the soup.
  11. 11. Let the stew simmer gently for about 1 hour.
  12. 12. Lightly puree the soup with a hand blender.
  13. 13. Thin the soup with a little more broth if necessary.
  14. 14. Let the soup thicken if it is too runny.
  15. 15. Season the stew with salt, pepper, and vinegar to taste.
  16. 16. Serve the stew garnished with fresh thyme.
