🍲 Creamy Split Pea Stew

Ingredients
- 1 onion
- 1 garlic clove
- 2 carrots
- 250 g celery
- 250 g leek
- 150 g brown mushrooms
- 2 tbsp butter
- 1 l vegetable broth
- 300 g yellow split peas
- 2 sprigs basil
- 2 sprigs thyme
- 2 sprigs oregano
- 1 bay leaf
- salt
- pepper (from the mill)
- 1 tbsp white balsamic vinegar
- thyme (for garnish)
Instructions
- 1. Peel the onion and garlic and chop them finely.
- 2. Peel the carrots and celery and dice them into small pieces.
- 3. Wash the leek, trim the hard ends, and slice it into rings.
- 4. Clean the mushrooms and cut them into quarters.
- 5. Heat the butter in a large pot.
- 6. Sauté the prepared vegetables in it for about 5 minutes.
- 7. Pour in the broth and add the peas to the pot.
- 8. Rinse the herbs and shake them dry.
- 9. Tie the herbs together with kitchen twine.
- 10. Add the herb bundle and the bay leaf to the soup.
- 11. Let the stew simmer gently for about 1 hour.
- 12. Lightly puree the soup with a hand blender.
- 13. Thin the soup with a little more broth if necessary.
- 14. Let the soup thicken if it is too runny.
- 15. Season the stew with salt, pepper, and vinegar to taste.
- 16. Serve the stew garnished with fresh thyme.
