🍽️ Grilled Shrimp Skewers with Fresh Melon-Banana Salsa

Ingredients
- 1 tbsp oil
- pepper
- 250 g large scampi (raw, peeled)
- 1 bunch spring onions
- 250 g Galia melon (flesh)
- 1 banana
- zest and juice of 1 lime
- salt
- cayenne pepper
- 1 tbsp chili sauce
- 6 sprigs mint
- 120 g basmati rice
- small wooden skewers
Instructions
- 1. Pour the oil and pepper into a small bowl.
- 2. Add the shrimp.
- 3. Toss the shrimp well to coat them evenly.
- 4. Set the bowl aside for a moment while you prepare the other ingredients.
- 5. Wash the spring onions.
- 6. Slice the spring onions into very fine rings.
- 7. Dice the melon into small cubes.
- 8. Peel the banana.
- 9. Cut the banana into small pieces.
- 10. Place the melon, banana, spring onions, grated lime zest, and lime juice in a larger bowl.
- 11. Season the mixture with salt, cayenne pepper, and a few drops of chili sauce to taste.
- 12. Rinse the mint under cold water.
- 13. Shake off the excess moisture from the mint.
- 14. Finely chop the mint leaves.
- 15. Stir the mint into the melon-banana mixture.
- 16. Cook the rice according to the package instructions in salted water.
- 17. Soak the wooden skewers in water for a few minutes.
- 18. Thread the shrimp onto the skewers.
- 19. Fry the skewers in a hot, non-stick pan until golden brown on all sides.
- 20. Serve the skewers together with the rice and the fresh salsa dip.
